Fat or thin, green or white or purple, asparagus are a harbinger of spring—and eating this vegetable is one of our favorite ways to welcome the new season. Here, we share 38 asparagus recipes that prove that there are endless ways to savor our favorite spring produce. Enjoy it grilled, steamed, sautéed, or even raw in salads—and pair it with pasta, salmon, or lamb chops, use it to top pizza, and fill quiche.
Asparagus is at its peak from February through June. When shopping for asparagus, choose bunches with tightly closed tips. Stalks should be bright green and firm (or pale ivory for white asparagus). As for thickness? That's a matter of taste. (Martha's favorite is jumbo asparagus.)
At home, wrap the bottoms of the stalks in a damp paper towel and place them in a paper bag; you should store them in the crisper drawer for the best results. Once you're ready to cook, hold the bunch upside down and gently swish it under cold water—the tender tips can be sandy. Next, snap off the tough woody bottoms. The easiest way is to bend the stalk at the natural breaking point (often where the color changes from white to green), about 1 or 2 inches from the base. Then you're ready to cook—so peruse our best asparagus recipes and enjoy a taste of spring.
