I have one suggestion: in your recipe information can you include the quart size of the crockpot needed for this recipe? That would be a big help!Reply
Holly says
I make this recipe exactly as it reads with one change. Instead of using hamburger, I use corn beef brisket. For some reason this changes the flavor and makes it even better! After using corn beef, I cannot get enough of this soup!!!! I cut up the brisket and put it in the crockpot with all the other ingredients and let it cook. Perfect every time!!Reply

Hi Dotti,
Your recipe sounds really good! Did you just use the liquid from the veggies or did you add the 64oz of Vegetable Juice as well? Going to diced up potatoes instead of the canned potatoes. Other then that I’m going to try your recipeReply

It sounds great and I would like to try it but with chicken. I can’t eat beef. What changes do I need to make? Thanks for your advice.
Aunt Lou says
Hi Avis! You could use a drained can of chicken. I have a 6 Can Crock Pot Chicken Vegetable Soup recipe, if you would like to try it. You can find it here: https://www.recipesthatcrock.com/6-can-crock-pot-chicken-vegetable-soup/. Hope this helps!

My vegetable soup that we just finished off is very similar to yours! My difference is, I don’t drain my cans of vegetables, so that would cut out one less can being the broth unless just want it, plus I use can of diced tomatoes seasoned with basil and oregano, which is plenty of seasoning other than salt and pepper, I add couple squirts of ketchup and a small can of tomato sauce, and I add a can of kidney beans and rinse the can with a little bit of water, and cut up a zucchini in it too. Sometimes I add the meat, sometimes not, It’s wonderful soup!Reply
Aunt Lou says
That sounds delicious Dottie! I love hearing the recipes of our readers!

Made this on stove top, simmered about 40 min and ready to eat!! Absolutely great.

I’m so glad you enjoyed this! Great job adjusting the recipe for the stove top!

I have this soup in my crock right now and it looks delicious. I made just a few adjustments, I sauteed the onions and used minced garlic instead of garlic salt. I used 1/2 tsp thyme, 2 bay leaves, 1 tablespoon basil, 1 tsp celery salt. I used diced potatoes instead of sliced. I hate it when people rate recipes before they make them but I am pretty sure I am going to love this. Keep the great recipes coming Aunt Lou!Reply

Those adjustments sound delicious! I hope you enjoyed it greatly! Thanks for the encouragement. I hope you find many more recipes here that you love.

With the 7 can crock pot vegetable soup, could you substitute stew meat for the hamburger?
I am going to try it both ways.
Thank you!!Reply
Aunt Lou says
I haven’t tried that before, but that sounds delicious! If you give it a try, let me know how it goes.
Susan says
I have made this twice now- left out the carrots because I don’t like them and add lima beans and a can of Rotel. I also sprinkled in some Paprika and red pepper to give it a little more flavor. It has been a hit both times. One of my co-workers is beginning her fight with cancer, so I am making another batch for her for the freezer for future meals.Reply

Prayers for your friend. <3 I am sure she will appreciate having this on hand. Your alterations to the recipe sound delicious!

Do you think that this would freeze well?
Reply
Aunt Lou says
I haven’t tried freezing this specific recipe, but have had success freezing other vegetable soups, so it might work. If you give it a try, let me know how it goes!

I have been making my stew like this but I use frozen vegetables & I save left over meat cut up & put it in. My step dad made it with rabbit meat & chicken & beef & homecanned vegetables. Will making some soon.

I love slow cooker recipes, but here’s a question with this 7 can crock pot veggie soup recipe. Does the 64 oz of vegetable juice include the liquids drained from the canned veggies, or is all of it 64 oz of something like V8? The soup sounds really good. Looking forward to having it. Thanks.Reply
Aunt Lou says
The 64 oz vegetable juice is a 64 oz jug of vegetable juice, like V8’s vegetable juice. You can just drain the liquid from your cans of vegetables in the sink. Enjoy!
Victoria says
LOL! Gotcha! I’m hoping to make this soon, it sounds like something my hubby would love (which would NOT be true without the beef!).

This recipe looks fabulous, but… if the first ingredient is ground beef how can it be vegetable soup? Isn’t it beef and vegetable? Or vegetable and beef, whatever.
I love your recipes, especially the Ninja/Instant Pot ones!
