There are two possible suits of Adamantine armor that you can make in Baldur's Gate 3: Scale Mail and Splint Armour. They both have the same enchantments. The only difference between them is their AC.
To craft the Adamantine armor, you need to place a Mould and a Mithral Ore in the Adamantine Forge near Grymforge. The Moulds are found spread out around the area near the forge, but there are only two Mithral Ores nearby, so you need to choose which items you'll forge carefully.
