It's Sheena's sister Shannon again with one of our very favorite recipes.
We make these amazing Calico Beans a couple times a month during the summer. It goes perfect with burgers, brats, BBQ... any of those fun summertime meals!
It makes enough for a crowd or leftovers, and is even more delicious the next day! You can cut the recipe in half for a smaller batch, too!
About a month ago, Sheena and I went to a spectacular rural antique shop in St. James, Minnesota called Blue Sky Antiques.
This antique shop is beautifully settled in the middle of farm country and is housed in an old barn and an added bonus for me was that there was an ACO silo in the yard.
I'm slightly obsessed with ACO silos. These are such historical structures on farms around Southern Minnesota and neighboring states.
Sheena found some great vintage Pyrex to add to her collection and the prices are very reasonable. If you're ever in farm country in Southern Minnesota, stop by for a visit!
What is in Calico Beans?
- Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.
- Butter beans: The term butter bean is widely used in North and South Carolina for a large, flat, yellow or white variety of lima bean. They can be consumed in both their immature stage (fresh and green) as well as their mature (dried and beige). They are great sources of fiber, protein, vitamin B and many other important vitamins and minerals.
- Ground beef: One of my absolute favorite meats to use in recipes! I buy 90% lean ground beef in bulk at Sam's Club, then package into one pound packages with freezer paper for our meals!
- Bell pepper: The bell pepper comes in different colors including red, yellow, orange, green, white, and purple. Red peppers have the most nutrition, because they've been on the vine longest. Green peppers are harvested earlier, before they have a chance to turn yellow, orange, and then red. Red bell peppers have almost 11 times more beta-carotene and 1.5 times more vitamin C than green.

This recipe is ready in these steps:
- Preheat the oven
- In a large skillet, fry the ground beef, bacon, onion, bell pepper and garlic
- In a casserole dish, combine all beans
- Stir in the ketchup, white vinegar, dry mustard, brown sugar and cooked beef
- Mix thoroughly
- Add salt and pepper
- Bake

Beefy Calico Beans
Yield: 10-12 side servings

Ingredients:
- 1 1/2 pounds lean ground beef
- 4 ounces bacon, chopped
- 1 medium yellow onion, chopped
- 1 orange or yellow bell pepper, chopped
- 3 cloves garlic, minced
- 1- 15 ounce can kidney beans, drained
- 1- 16 ounce can baked beans
- 3- 15 ounce cans butter beans, drained
- 1/2 cup ketchup
- 2 teaspoons white vinegar
- 1 tablespoon dried mustard
- 3/4 cup packed brown sugar
- salt and pepper, as needed
Instructions:
- Preheat the oven to 350 degrees.
- In a large skillet over medium heat, fry the ground beef, bacon, onion, bell pepper and garlic until ground beef is no longer pink.
- In a large casserole dish, combine all beans.
- Stir in the ketchup, white vinegar, dry mustard, brown sugar and cooked beef mixture.
- Mix thoroughly. Add salt and pepper.
- Bake for 60 minutes.
