Cauliflower Cheese Soup - a speed vegetable filled dish that you will just love.

Most recipes on here are created when I open my fridge and spot an ingredient that needs to be use up and this was one of those types of meals. Head of cauliflower - check! delicious aged good quality balderson Mature Canadian cheddar - check!

You can see where I am going here, right? Now I could of just made cauliflower cheese with those ingredients, but I wanted a meal by itself, so instead opted for a Cauliflower Cheese Soup and the end result was delicious.

This Cauliflower Cheese Soup is just simple ingredients, nothing complicated, no special ingredients you have to go out and purchase. Well except for the cheese of course. I don't advise you compromise on the cheese. A good quality strong cheddar is a must, otherwise you may as well not bother adding any cheese or calling it Cauliflower Cheese Soup for that matter, because you just won't get that same cheesy taste and well if it has cheese in the title, then it should taste of cheese, right?

As one of the main ingredients in this soup is cauliflower, it is also a great dish for speed foods. As cauliflower is one of the many speed vegetables on Slimming Eats (There are some vegetables that are not and those are the starchy ones like parsnips, plantain, sweetcorn, peas etc). Serve this Cauliflower Cheese Soup just as it is, or bulk it up into a meal.

One thing I love to do with soups, is add some leftovers to the top. Before my Slimming Eats days, soup always meant bread, the thick white stuff at that too, with lashing of butter spread on top and well that just isn't going to happen. So instead I often add some things to the top of my soup (especially if it is just vegetables) to make it more filling. Some source of protein is great, like a bit of leftover cooked chicken or some sliced up cooked sausage or even meatballs. I have also added cooked noodles into soup or leftover quinoa, rice, lentils etc.

This Cauliflower Cheese soup is gluten free as well as being suitable for vegetarians (use vegetable stock).

It is the best kitchen gadget I have purchased. I would even put it above my actifry and that's saying something. I love this thing so much, that I almost use it EVERY.SINGLE.DAY.

It seriously tops every kitchen appliance I have ever bought.

It is basically a 7in1 cooker, and it slow cooks, pressure cooks, saute's, has settings for soup, chilli, rice, porridge and even makes yoghurt (I haven't tried that yet).

Cauliflower Cheese Soup

This recipe is gluten free, vegetarian and Weight Watchers friendly

Ingredients

  • 800g (28oz) of cauliflower, chopped
  • 1 onion, finely chopped
  • 4 cups (960ml) of chicken or vegetable stock
  • 120g (4oz) of strong mature cheddar
  • salt and black pepper to season
  • spray oil

Instructions

  1. Spray a large pot over a medium high heat with spray oil
  2. Add the onion and fry till softened and lightly caramelized (approx 5 mins)
  3. Add the cauliflower and stock
  4. Bring to a boil and then reduce heat, cover and simmer for 20 mins.
  5. Add about ½ soup to a blender and blend till smooth.
  6. Pour back into the saucepan with the cheddar and stir until cheese is melted.
  7. Season as needed with salt and black pepper

Notes

Instant Pot: Set to saute mode, fry onion in spray oil, add cauliflower and stock, set to manual high pressure for 5 mins, then a quick pressure release. Set back to saute mode, add cheese and stir till melted.

    Very easy recipe but tasty. Like cauliflower cheese in a bowl! All the family loved it. So quick and simple to prepare. I took a quarter of the florets out and blended the remainder.

    Just decided to try this and love having ingredients on hand 5 mins in the instant pot! 2 mons prep and then I used the BaMix to make a smooth soup! Delicious, quick and super cheap too! Just added dome sliced spring onions for colour on top!
