How to Melt Chocolate on the Stove
One way to melt chocolate is on the stove using a double boiler. You can purchase a fancy double boiler, but it's easy to create one on your own by using a saucepan and a bowl.
Choose a bowl that is heat safe and slightly larger than the sauce pan. The bowl should fit over the saucepan but not fit completely inside so it touches the water from the saucepan below it.
- Place water in the bottom saucepan which is then placed directly over the heat from the stove.
- Then gently place the bowl with the chocolate on top.
- As the water simmers, the heat will begin to melt the chocolate in the bowl.
- Be careful that the water doesn't boil and that none of the water gets into the bowl.
📌Quick Tip: The biggest mistake people make when melting chocolate on the stove is getting water into the bowl with the chocolate. Water seizes the chocolate and you will have a huge mess.
How to Melt Chocolate in the Microwave
- Place the choclate in a bowl in the microwave using the low setting and starting out in 30 seconds intervals.
- Remove the bowl from the microwave and stir the chocolate.
- If you don't stir, you risk burning the chocolate.
- Return the chocolate back to the microwave and repeat with another 10 to 15 seconds; stirring after each interval until the chocolate is completely melted.
- In just a few minutes you'll have perfectly beautiful melted chocolate for dipping the strawberries.
📌Quick Tip: The mistake people make when melting chocolate in the microwave is forgetting to stir the chocolate after each interval. Chocolate pieces can retain their shape until you stir them. If you overheat the chocolate, it will also seize up and not be usable.

Tips for Selecting Strawberries
Here are a few tips for selecting perfect strawberries for dipping in chocolate:
- Just because a strawberry is big, doesn't mean it's sweet. In fact, the smaller the strawberry, the sweeter it is.
- Try to get strawberries that have a stem. They make a great presentation and you have something to hold on to while dipping them in the melted chocoalte. '
🍶Storage Tips
- Once the chocolate has set, store the chocolate covered strawberries at room temperature.
- Place them either on a baking tray covered with parchment paper or a container lined with parchment paper.
- You can cover them lightly with another piece of parchment paper if you're worried about dust particles. If you store them in the refrigerator, there's a chance for condensation or "sweat" to appear on the surface of the strawberries.
- Chocolate covered strawberries should not be frozen.
