Clean Eating Soft Pretzels Recipe | The Gracious Pantry (1)

Once upon a time, there was a little mouse, who lived in a little house by the edge of the sea.

He loved bread with all his heart, and his morning would not start,
until with a baguette from the house he could part.

But this small little mouse with the large baguette, was often vexed and beset. For when he ran low and needed more, he’d often have trouble squeezing baguettes through his door.

Until one day to his delight, he discovered a pretzel. Such a beautiful sight! With the greatest of ease, it slipped through the door, and now our little mouse, is vexed no more. He nibbles his pretzel and sips his tea, that tiny little mouse, in the house by the sea.

– By Tiffany McCauley and Mini Chef

Mini Chef was begging me for some pretzels.I don’t keep them in the house because I can never find any store-bought pretzels that are clean. So instead, I did a quick google search for whole wheat pretzels and found a wonderful recipe that needed very little tweaking to make it clean.

Now, whenever Mini Chef and I bake together, I always make sure that I give him his own piece of dough to knead and play with. Because inevitably, it will end up on the floor and I don’t want that to be the fate of the entire batch of dough. So he always gets his own.

While he was kneading his dough, he was telling me a wild and crazy story concerning spaceships, hammers and his commission. I’m still not sure what that story was about, but somehow, he ended his story with a mouse in a house. The whole thing spiraled out from there, and the result is the little story you just read above.

As for this recipe, it’s is a keeper for sure! The pretzels turned out very soft and tender and the flavor is warm and inviting like most whole grain products are when they are fresh out of the oven. The kitchen smelled like an old fashion bakery!

These are actually more like a soft dinner roll. I love them! The possibilities with this recipe are endless really.

And if the idea of making bread scares you, don’t let it. This is very simple to make. And just for the record, these are also definitely Mini Chef approved!

Total Time: 1 hour hour 50 minutes minutes

Servings: 13 pretzels

Ingredients

  • 1 packet rapid rise yeast
  • 3 tbsp. honey
  • 1 ½ cups warm water (between 105-115 degrees F.)
  • 4 ½ cups whole wheat pastry flour (affiliate link)

US CustomaryMetric

Instructions

  • Line two cookie sheets with parchment paper.

  • Combine the warm water and honey in a medium bowl and stir until honey is dissolved.

  • Pour in the yeast, stir very briefly just to incorporate, and set aside so it can foam.

  • In a large mixing bowl, whisk together the flour and salt.

  • Add the oil and the foamy yeast to the flour bowl and mix with a wooden spoon until it becomes to thick to continue.

  • Knead by hand for about 10 minutes. The dough will be very sticky, but after kneading for about 3-4 minutes, it should become a nice, smooth dough. It will still be sticky, but should not leave any dough behind on your hands. (You may need to stop and wash your hands first and then continue kneading to be sure.) If the dough continues to stick to your hands, add 1 tbsp. of flour more to the dough. Knead well. Repeat if necessary.

  • Now you can shape your dough as shown. The cord of dough in picture 1 is approximately 1/2 inch thick and approximately 14 inches long.

  • Once you have all of your pretzels formed and on the cookie sheets, cover the sheets with a towel and let them sit for 1 hour. When you come back, they should be nice a “fluffy” (doubled in size).

  • Preheat your oven to 425 degrees F.

  • Now you can brush on the egg wash, sprinkle them with seeds and bake for 15-18 minutes or until golden brown.

  • Allow to cool and serve.

FAQs

What is the alkaline solution for pretzels? ›

Chewy baked pretzels are traditionally dipped in a solution of three to four per cent food-grade lye before baking to enhance the Maillard reaction, which is responsible for that deep mahogany colour and more complex flavours. At home, a more common method is to use baking soda, or sodium bicarbonate, a weaker alkali.

Why do you put baking soda in water when making pretzels? ›

Like lye, baking soda is an alkaline substance, and when mixed with water and brushed over the pretzel dough, it changes the pH of the dough and gelates the surface starch. In the oven, the starch gel hardens and the alkaline baking soda makes browning happen fast.

What can I use instead of lye for pretzels? ›

The most benign substitute for lye is baking soda. You'll get a little bit of browning and some chew, but don't expect it to taste very pretzel-y. You can also used baked baking soda, which is a stronger alkali than baking soda but not as caustic as lye.

How many days are soft pretzels good for? ›

Soft pretzels are best eaten fresh, but leftovers can be stored in an airtight container for up to 3 days.

How do you make a strong alkaline solution? ›

Stir ½-1 tsp (3-6 g) of baking soda into 8 oz (237 mL) of water to raise its pH. Or, infuse your water with slices of lemon or cucumber. Use an alkaline water filter pitcher to raise your water's pH and remove impurities. Or, install a water ionizer machine on your kitchen faucet.

What are examples of alkaline solutions? ›

Alkaline solutions are also known as basic solutions. They can be generated when metal oxides or metal hydroxides are put into water to dissolve. Examples of an alkaline solutions are sodium hydroxide solutions or potassium hydroxide solutions. In alkaline solutions, hydroxide ions (OH-1 are in solution.

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

Lye. The dough is simple; take a basic yeast-risen dough that can be readied in an afternoon. But the trick to great pretzels is dipping the pretzels in a liquid wash before baking — and not just any wash, but a combination of water and lye. That's what gives pretzels their terrific color, texture and flavor.

What is a natural alternative to lye? ›

In this method, you're replacing lye with baking soda, both of which are alkalies. However, lye is much stronger than baking soda. Heating up baking soda in the oven turns it from sodium bicarbonate into sodium carbonate, making it a slightly stronger alkali that'll better replace the lye.

Is baking soda or lye better for pretzels? ›

No. You can prepare a baking soda bath instead. See more directions below. But if you want the most perfect pretzels possible, give lye a try!

Are there any healthy pretzels? ›

Fitjoy pretzels are an all-around great choice, as they have no added sugar, a mere 3g of fat, and even boast a gram of protein.

Are soft pretzels junk food? ›

Pretzels may be better than some fatty chips, but four out of five nutrition experts surveyed by Time say if you're trying to eat healthy, pretzels shouldn't be your go-to snack. Although pretzels are low-fat, they are also pretty paltry on the protein and fiber front, and they can be quite high in sodium and carbs.

Can you eat 2 year old pretzels? ›

Although hard pretzels have a longer shelf life, typically 6 to 9 months at peak quality, they are still safe to consume past their expiration date if they've been stored correctly and do not exhibit signs of spoilage.

What solution are pretzels dipped in? ›

Traditional German pretzels are first dipped in a 3% to 4% lye-to-water bath before baking. Pretzel purists often argue a pretzel isn't really a pretzel unless lye is used.

What kind of lye is used for pretzels? ›

To prepare a lye bath for pretzels, fill a large liquid measuring cup with four cups of cold water. Add the water to a heavy, plastic container and carefully mix with two tablespoons of food-grade lye until fully dissolved.

Is it safe to eat lye on pretzels? ›

Lye is primarily used to make pretzels, and it's the reason for their unmistakable shiny, mahogany color. To prepare, shaped pretzels are dipped in a lye bath, then baked in the oven. This method can also be used with rolls or buns. Once lye-dipped pretzels are baked, they're totally safe (and delicious!) to eat.

What does dipping a pretzel in an alkali solution do? ›

An alkaline bath is what makes a pretzel a pretzel and not just a tanned twist of dough. The base reacts with proteins, sugars, and starches at the pretzel's surface to intensify browning and give the skin its tight, glossy sheen. It also imparts that saline, mineral flavor.
