Instructions
1. First step: In a medium bowl, blend together cottage cheese, peanut butter, and honey until smooth using animmersion blender.
2. To meltchocolate chips, I use the “warm” setting on my Cuisinart Toaster Oven. You can also use a microwave: heat the chocolate in 20-second intervals, stirring in between until it's smooth. If it gets too thick, add a small spoonful of ghee to make it smoother.
3. Evenly distribute the blended cottage cheese mixture into individual dessert bowls.
4. Top withmelted chocolate.
5. Sprinkle with chopped peanuts. Refrigerate for about 30 minutes and enjoy!Store leftoversin the fridge in anairtight container, though I doubt there will be any.

I kept the chocolate chips unmelted (I like the crunch to balance out the texture), and froze it and ate as ice cream!

What a creative twist! The frozen version must be very refreshing. Thanks for sharing the tip! - Alena

I made this for just one and used 1/2 cup cottage cheese. For the other ingredients I used 2 Tbsp for each ingredient. It turned out great and very delicious! Thanks for the recipe!

How much protein is one little snack?
alenatrs
I cannot provide an exact amount of protein per serving. However, according to one of the comments from Pinterest, someone used MyFitnessPal to calculate that each serving contains approximately 18 grams of protein. - Alena

That's what I go also and 455 calories. I need to adjust this recipe. For some reason I thought this would be healthy.

I changed my sweetener to liquid monk fruit drops and all natural pb no sugar or pb fit powder , use Lilly’s or hersheys sugar free chips and it’s in the keto range and did 6 servings

That sounds like a great way to keep it keto-friendly! Thank you so much for sharing your tips! - Alena

I made these today and though they were good, I will use mini chips instead as the melted chocolate got very hard and did not work well when eating it.

Next time, try adding coconut oil or butter to your melted chocolate so that it's not too hard. I make homemade granola bars with chocolate topping and always add a tbsp of coconut oil to the chocolate chips so that we can easily bite into the bars through the chocolate topping.

Totally agree. Since chocolate brands can vary in texture and hardness, adding coconut oil, ghee or butter can help make the chocolate topping smoother and easier to bite into. You might want to start with a teaspoon of coconut oil and adjust as needed to get the consistency you prefer. - Alena

I am amazed at how this turned out. My mother hates cottage cheese but she had no clue and feel in love with this dessert.

I substituted stevia for some of the honey and it tasted great! THANKS!
