And perhaps the halls are even decked, too? Ok, maybe that’s asking a bit much. But I do hope that you are all settled down to a day of fun with the family! This Christmas will be especially memorable for us. While we aren’t traveling to visit family this year, we do have a 5 week old bundle of squirmy baby to spend the holiday with. Little Robbie is happy and healthy, and that is the best Christmas present we could ask for!

But give him a couple more years, and he’ll be the perfect age for Christmas. You know the age. It’s the age when Santa watches all year long to decide whether you’ve been bad or good. It’s the age when you can’t sleep on Christmas Eve out of sheer excitement. It’s the age when you write letters to the North Pole and hope they arrive in time. It’s the perfect age.

My Dad would always put talcum powder out on the fireplace as a “trap” to catch the big man in the red suit. And sure enough, the next morning, my sister and I would come downstairs to see a boot print on the hearth. Santa did come after all! (As I got older, I found it strange that my Dad wore the same boots as Santa…)

Another good one is to have someone go outside and shake sleigh bells just as the kids are going to bed. Talk about a surefire way to have dreams of sugar plums dancing in their heads. (Or maybe that’s just a surefire way to make sure the kids never actually sleep out of pure excitement…but hey, it’s part of the mystique that is Christmas!) And I just so happen to have a full Santa suit. Don’t ask me why. But I do. And you better be sure that Robbie will just happen to glance out of the window at the same time that I am sneaking through the backyard in that suit. I just hope the dogs don’t recognize me…

Mix dried oats, granulated sugar and a bit of green or red sparkling sugar. Then take the kids outside and sprinkle this on the lawn. It’ll help attract the reindeer to your house…which of course means Santa will be there, too. (Disclaimer: Neighborhood cats also like reindeer food.) But again, it’s all about the mystique of Christmas!

For us, holiday traditions often revolve around tasty food and drinks. This Dark Chocolate Almond Fudge couldn’t be any easier to make! It’s 4 ingredients…and that’s counting the vanilla extract. This fudge is literally fool proof. It’s quick, easy and almost impossible to mess up. Oh, and did I mention that it’s delicious? I trimmed off the edges of the fudge so that I could cut these little squares…and I couldn’t stop nibbling on those edges. Seriously. The entire time I was taking these photos, there was one hand on the camera and one hand in the leftover fudge.

I used a can of Blue Diamond Lightly Salted Almonds for this Dark Chocolate Almond Fudge. The little hint of salt combined with the chocolate is amazing! We immediately packaged up about half of this fudge and delivered it to the neighbors. I couldn’t trust myself around it! I’m thinking it would also be fun to mix this recipe up and use some of Blue Diamond’s other almond flavors. Maybe use Honey Roasted almonds…or Cafe Mocha almonds…or maybe even get crazy and use Jalapeno Smokehouse almonds? Yeah, that needs to happen! This fudge would be an excellent treat for New Year’s Eve parties and celebrations…just sayin’.

Ingredients

Instructions

  • Set ¼ cup almonds aside (these will be used as garnish later). Coarsely chop remaining almonds; set aside.

  • Line an 8” square baking pan with foil or parchment paper; set aside.

  • Using a medium saucepan, add chocolate and sweetened condensed milk. Cook over low heat, stirring often, until smooth. Remove pan from heat and stir in chopped almonds and vanilla extract.

  • Pour chocolate mixture into prepared baking pan, using a spatula to help spread mixture evenly. Gently press remaining almonds into top of chocolate.

  • Refrigerate for 2 hours, or until firm.

  • Remove from pan; discard parchment/foil. Slice into 36 pieces.
