9. Roasted Rainbow Cauliflower
These colorful heads of cauliflower are way more than just eye candy! Another option for unlimited food lovers. You only need four key ingredients for this recipe, and about a half an hour to feed the whole family.
The best part? Everyone can get their veggies, and they’ll be sure to keep asking for more. It’s that good, and it looks stunning on your plate.
8. High Powered Chicken Soup
Now this recipe is a real winner! It’s chicken soup, but taken up a notch to warm the heart, the soul, and the body. Dr. C was kind enough to make me a bowl when we finished a lengthy trip. I was recuperating from a cold, and it was the best tasting bowl of soup I’ve had in my life. What makes it so special? You’ll just have to see for yourself, but I can easily vouch for it.
7. Best Spaghetti Squash Recipe Ever
A collection of wholesome ingredients, and only an hour out of your day, and you can end up with a serving of the best spaghetti squash that you have ever tried. It’s so simple, and relies on a host of feel-good ingredients. Word to the wise? Always go with fresh basil, as it really livens a dish up and brings a level of herby goodness that is not easy to forget.
6. Shredded Chicken for a Week’s Worth of Meals
A whole week? It’s true! This prep-ahead recipe is always a family recipe, because it is easy to make, easy to pack up and portion, and easy to enjoy all week long. Especially when it comes to healthy lunches, whether it’s for school or work, you just can’t beat real chicken (and, if you have the extra time and patience, homemade bread is always a great idea).
5.
Try as hard as you might, but just one look at this recipe is going to put it at the top of your to-do list tonight (so you’ve been warned). An especially great addition to this recipe is arrowroot flour, which has resistant starch, is high in potassium, and a whole host of other benefits that you’ll learn more as you’re making dinner tonight.
4. Quinoa and Pea Pilaf
A fluffy quinoa pilaf is just about the most delicious light dinner in existence. It’s light, it is filled with so many beautiful colors, and the addition of fresh-snipped herbs really adds a whole lot of freshness to the meal as a whole. It only takes about a half an hour, too, which means that you could also serve it as lunch (and it also tastes great the next day, too).
3. Asian Soup Stock
One of the things that we look for the most in our recipes is versatility. That’s why the foundational qualities of this Asian Soup Stock really take the cake.
They have a hearty, medicinal quality to them that is perfect for cold nights, but also has a certain lightness to it (thanks to the lemongrass) which lends itself well to spring and summer cooking. A little bit of everything, and the power of ordinary mushrooms – sounds perfect!
2. Cilantro Garlic Salad Dressing
Good recipes come and go, but a good dressing is forever! This is seriously one of the most versatile, and delicious, dressing recipes that we have. It has a robust flavor profile to it, tastes fresh, and even has a hint of spice (thanks to the jalapeno in it). It’s a recipe you can come back to time and time again, and something you can pair with any salad ingredients. Dr. C loves it, and you will too!
1. Ratatouille Unlimited Food Recipe
The name alone makes ratatouille an intimidating recipe to try in any household, but don’t worry because this recipe is super easy! The best part is that you can make extra batches, and they can be easily reheated and enjoyed the next couple days. It’s a smorgasbord of unlimited foods, which means that it tastes good and is good for you. What’s not to love about that for being #1?
