Easter is just around the corner. In fact I realized as I was shopping through Walmart that it really is only a week and a half away. I have a lot to do between now and then. I need to find the kids some Easter clothes, plan their Easter baskets, and make a lot of Easter eggs! I want it to be special because it will be Caroline’s first Easter.
One thing I do have planed already is to make some bread pudding for brunch. It is the perfect accompaniment to a brunch as it has all the flavors of french toast. If you have never made it before, it is really simple… well, at least the way I make it!
I found this recipe online a while back, and it has become a great breakfast or dessert go to ever since.
Easy Bread Pudding

An easy bread pudding recipe perfect for brunch or for a dessert. It is easy to modify to your specifications.
Ingredients
- Day old bread
- 2 tablespoons melted butter
- 1/2 cup raisins
- 4 eggs
- 2 cups milk
- 3/4 cup sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla
Instructions
Preheat oven to 350 degrees.
Cube enough bread to fill a 8 inch square baking pan, I actually used a circle baking dish because I didn't have a square one on hand. Pour melted butter over bread. If desired and sprinkle with raisins.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push bread down to be sure that the bread is covered and soaking up the egg mixture.
Bake in the preheated oven for 45 minutes.

Caution… if you are making this when you are very tired, be sure you don’t substitute cumin for the cinnamon (I may or may not know from experience that this is disgusting)!

My mom loves bread pudding. I am not sure what we are doing for our Easter meal. We don’t usually do a traditional ham or whatever. I haven’t thought about it much. 🙂

Bread pudding is on of my Cajun born and bred hubby’s childhood favorites. I tried a number of recipes over the years and never gotten it quite right. He loved this one as it “was just like Nanny’s”. This is now my family’s bread pudding recipe. Thank you.Reply

I have been looking for a good and easy bread pudding recipe for a while now. Today I said I will just go for any easy one that comes my way first. Your recipe caught my eye. I like it because of the ingredients you use in it. I right away started mixing and my pudding is in the oven. I cannot wait! I’m glad I had all the ingredients that was required.
