- 1 1/2 cups small-diced celery (usually 4 stalks)
- 1/2 cup small-diced red bell pepper
- 1/2 cup small-diced yellow bell pepper
- 1 tablespoon capers, drained
- 1/4 teaspoon Tabasco hot sauce
- 1/4 cup minced fresh flat-leaf parsley
- 1/2 teaspoon Worcestershire sauce
- 1 1/2 teaspoons Old Bay crab boil seasoning
- 2 extra-large eggs, lightly beaten
- 2 teaspoons Dijon mustard
- 1/2 cup good mayonnaise
- 3 slices stale bread, crusts removed
How To Make Salmon Cakes
Preheat your oven to 350 °F.
Place the salmon skin-side down on a sheet pan. Brush olive oil and season with salt and pepper. Roast for 15 to 20 minutes, until just done. Remove from the oven and carefully wrap with aluminum foil. Allow to cool for 10 minutes before storing in the refrigerator.

How To Make Creamy Salmon Scampi
Brush olive oil lightly into a large nonstick pan over medium-low heat. Cook the bread pieces, stirring periodically, until toasted and brown on the bottom, approximately 3 minutes. Flip and toast the other side for 2-3 minutes. While the slices are still hot, massage one side with the smashed garlic and drizzle with 1 tablespoon olive oil. Season gently with salt and pepper and leave aside. Wipe the skillet using a paper towel.
Heat 1 tablespoon olive oil in a pan over medium-high heat. Pat the salmon dry and season both sides with salt and pepper. When the oil is heated, add the salmon, flesh side down, and cook for 2 to 3 minutes, until thoroughly browned. Flip the salmon and cook for another 2 to 3 minutes, depending on its thickness. Transfer to a platter and wipe off the skillet with a paper towel.
Heat the skillet over medium heat. Combine the remaining 1 tablespoon olive oil and butter. When the butter has melted, add the chopped garlic and red pepper flakes, stirring until sizzling, about 30 seconds; be careful not to burn them. Bring the wine and lemon juice to a boil.
Cook, stirring, until the mixture has been reduced by half, about 1 to 2 minutes. Stir in the cream and cook for 1 to 2 minutes, or until it thickens slightly.
