This my healthier version of a dessert fritter. When creating a recipe, I really like to try and make my treats a little healthier than the original version. I do this with healthy ingredient swaps, focusing on lowering the glycemic impact, while still maintaining as much amazing flavor and texture as possible.

Benefits of souring your dough

Firstly, the sourdough in these fritters provide gut healthy probiotics that will contribute to a healthy microbiome. It’s also worth noting that the souring process may even reduce gluten levels in the fished product. Wheat prepared in this traditional way of souring neutralizes phytic acid in the wheat, therefor breaking down the wheat for you, making it easier to digest. Moreover, sourdough also gives more nutrients to the flour by releasing antioxidants and increasing folate levels.

Easier on blood sugar

Secondly, because of the fermentation process, these fritters are lower on the glycemic index because of the acids produced in the souring process. Any fermented food you consume contains lactic acid and acetic acid. These acids will interfere with the carbohydrates that want to turn into blood sugar, therefore reducing the blood sugar spike overall. I believe reducing blood sugar spikes is so important for your overall health!

As you may have already accessed, the glaze in this recipe contains powdered sugar that will spike blood sugar levels. A healthier alternative that we have also enjoyed is to drizzle a little raw honey on your fritters. Honey is rated a humble 30 on the glycemic index, while sugar maxes the index out at 100. These fritters are also delicious plain!

Healthy frying oil

Thirdly, I highly recommend frying in a healthy oil. My oil of choice for high heat frying is refined coconut oil. Because refined coconut oil is more costly than vegetable oil, I always hesitate to use it in such large quantities.

However, I did a little research and so long as you clean your oil properly after frying by removing any food particles it can be reused! You can do this by pouring your oil through a fine mesh strainer or by simply picking out any food particles you see. By using saved and cleaned coconut oil you will also impart more flavor to your future sourdough fritters! It’s a win win!

Delicious – They are just so good! Truly! The vanilla almond glaze is the perfect flavor combination to go with the lightly sweet and slightly sour fritter. When served warm they have an amazing crisp on the outside, but are fluffy and soft on the inside. They are a pure delight!

Simple – They are so easy to whip up and are basically a no-fail recipe! I can make them for a fun breakfast treat or after dinner in around 20 minutes. The only forethought you need is to ferment the dough overnight, but it can sit on your counter from as little as 12 hours and up 48 hours and, in my experience, it doesn’t seem to change the flavor of the dough. When you are ready to make them, just add the three remaining ingredients to the dough, let it rise for about 5-10 minutes, and plop into the oil to cook for about 5 minutes. Simple!

Unique Crowd Pleaser – These are such a unique treat that they will be an experience for anyone who eats them. I have tested them on many, and so far everyone enjoys them. They are like a homemade doughnut, but better!

Tips for Sourdough Apricot Fritters

  • Be sure to let the dough rise once you have mixed in the baking soda and shaped them, but not for too long. They will get their maximum rise if they are fried around 5-15 minutes after rising. They start to lose their rise at around 30 minutes of rise time.
  • For even cooking, do not make them too big. You want to aim for a fritter that is about 2 tablespoons worth of dough so that your fritter can cook quickly and be thoroughly cooked on the inside, but not burned on the outside.
  • To keep coconut oil usage down (it’s just painful for me to scoop out 2 cups of coconut oil for one recipe!), use a smaller fry pan, about 10 inches or less. This will ensure you have tp use less oil to get about half an inch of oil in your frying pan. It will also be easier to maintain even oil heat in a smaller pan.
  • So that you do not have a coconut flavor to your fritters, be sure you are using refined coconut oil. Virgin coconut oil has the coconut taste and will impart that to your fritters, which could be delicious, but it’s also more costly. Refined coconut oil is far cheaper than virgin coconut oil and the health benefits of virgin oil will be killed off in the high heat of frying.
  • Finally, you really want to keep your oil at an even temp for even cooking. I have found for me, cooking on an electric coil stove, that I need to turn down the heat a little bit after each bath of fritters. Using a meat thermometer, I also continue to check the oil temperature throughout my frying to keep it within 325-350 degrees.

Ingredients You Will Need

Sourdough Apricot Fritters

1 cup of sourdough starter

2/3 cups flour, white or wheat is fine

1/4 cup honey

1/4 teaspoon salt

1/2 teaspoon baking soda, make sure there are no clumps

1/3 cup chopped, dried apricots

Glaze

1/4 cup powdered sugar

1/4 teaspoon pure almond extract

1 teaspoon pure vanilla extract

How to Make Sourdough Apricot Fritters

The night before you want to make the fritters, mix the flour, sourdough starter, and honey together in a glass mixing bowl with a wooden spoon.

The next day, when you are ready to make your fritters, start by scooping one cup of refined coconut oil into your small frying pan, or however much oil is needed to get you roughly a half inch of oil in your pan. Start warming up the oil slowly on med-low heat. Heating the oil slowly as you prepare the other ingredients will give you more control over the oil to ensure it does not get too hot and burn the fritters.

Next, mix the salt, baking soda, and chopped apricots into the ferment dough you mixed up the night before. You want to mix the baking soda in thoroughly, so I highly recommend mixing with your hands.

Then, scoop out 2 tablespoons of dough at a time, lightly rolling between your hands to make a ball. You may need to lightly coat your hand in flour to prevent sticking. Place them on a floured surface to rise for 5-10 minutes until your oil reaches 325-350 degrees.

Frying

When the oil is hot and ready, gently place your fritter dough in the oil in batches and let them cook on one side for about 2-3 minutes or until they are a deep golden brown. Flip, and let them cook again on the other side for roughly the same amount of time.

For golden brown and thoroughly cooked fritters you really want to keep your oil temperature between 325-350. Measure the temperature of your oil after each batch of fritters. If it’s getting too hot you can turn the heat down slightly or remove the pan from the heat for a minute to let it cool off and be the proper temperature for your next batch of fritters.

Glaze

While the fritters are cooking, make your glaze. Mix the powdered sugar, extracts, and cream in a small shallow bowl with a fork until smooth.

When your fitters are done cooking, let them cool on paper towels for 3-5 minutes. Then, while they are still warm, turn them upside-down and dip them in the glaze.

Ingredients

  • 1 cup sourdough starter

  • 1/2 tespoon baking soda
  • 1/4 teaspoon salt
