I made this recipe exactly as written and although delicious, the consistency of the sauce did change from creamy, while I was mixing in the noodles. to gloppy even though I did dilute the cream sauce with starchy pasta water. I wish I had of read the reviews first and heated the milk before adding to the roux. I will try this recipe again and review it with this change at a later date.

Perfect. The only thing I did differently was to add fresh chilli to give it a little kick as we eat spicy food. My partner loved it.

This was just okay. I followed the recipe exactly and heeded tips from other reviewers - warmed the milk before adding it, rinsed the pasta after cooking, added peas - but I was still disappointed. I LOVE bacon, but this dish tasted too greasy and bacony for me. You definitely have to have all your prep/ingredients measured out and ready to go as there is no time to do that while you're cooking, but now I'm left with a bunch of stuff to clean up and bacon grease in the back of my throat.

My boys couldn't tell that this dish was low fat. The bacon gives it a unique taste. Great Sunday dinner.

I gave it three stars, because like another reviewer, my dish turned gluey pretty quickly. I will try using hot milk and a little extra liquid the next time. The bacon gave the dish a great flavor. I will definitely make this again. It was so easy and quick. My skinny husband added butter to his portion.

I would suggest trying it again and following the directions exactly. If you have the sauce already going at a good heat it should melt right in.

This was just ok. When I was mixing it in the pan it seemed nice and creamy, but just a few minutes later it had that gluey consistency that can happen with you make a "cream" sauce with flour and milk. I might keep looking for another alfredo recipe.

It's simple and versatile. I add chicken or shrimp for a main dish or leave as is for a side. Very tasty. The bacon makes it great.

The whole family loved this and demanded a double batch next time for left-overs. What made everything go together quickly was that we had bacon for breakfast and saved some back for the recipe, so skipping that step with dinner really made this dish go together in about 5 minutes. I had no trouble with sticky pasta - heating the milk to hot before whisking in with the flour mixture may have made the difference. I whisked in the pasta water right after the cheese melted in, then dumped in the hot pasta. Tossed green salads completed the meal. This is a lovely treat and what DD called "excellent comfort food!"

I'm going to have to try this recipe again. I think it may taste a lot better if you use the ingredients listed and not try to use "like" ingredients. I can tell you that the fresh parsely would have made a world of difference as oppose to the dry parsley. Also, be careful when cooking your sauce. Mine evaporated really quickly so my noodles were sticky. I'll probably always use the bacon I have at home but the parsley and Parmigiano-Reggiano cheese should probably not be swapped out. Will review again when I have the right ingredients.

Husband and I enjoyed this very much. Followed the recipe almost exactly, with the exceptions of using dried parsley (didn't have any fresh) and adding about 1/8 teaspoon of nutmeg to the sauce the way my best friend's Italian granny always made her Alfredo sauce. My sauce came out creamy and delicious and the pasta wasn't gummy at all. Hubby didn't even know it was light!

I substituted pancetta for the bacon. I probably should have omitted the salt but the flavor was still very good. Like other reviewers, I did find the pasta to be a bit too sticky for my taste. Next time, I will try adding a bit more cooking liquid.

I love alfredo sauce! Cooking Light is always so awesome coming up with different ways to make it sans heavy cream and butter! Very easy and delish recipe. I made it with regular pasta because I had it on hand. Mine came out creamy. I did whisk so that might do the trick to keep it from being grainy. They reduce the fat and calories from pasta dishes without sacrificing taste- hmmm, now how to remove the carbs without sacrificing the pasta ;)

This recipe made for an easy-breezy weeknight dinner that all enjoyed =) I made no changes. I don't quite understand the whole using bacon fat in something that is a "light" recipe, but who am I to complain? It's bacon! I didn't get the grainy feeling that others did. Really, I think it's a keeper, quick and easy.

This is fantastic! Sauce turned out creamy and not grainy at all. I did cook the flour a tad bit more and used a whisk when adding the pasta water. This one is a keeper!

Not the best, but not the worst either, especially for something that cooks up so fast. Whisking helps avoid the graininess a few other reviewers mentioned. You really do need high quality ingredients for this recipe to work.

This was ok. I followed the recipe exactly except no parcely. I think it tasted better before I added the pasta water. It had to sit for a little bit until my boyfriend got home and it looked curdled by the time he ate. I'll make it again but try and maybe add some fresh lemon juice and leave out the pasta water.

Our whole family enjoyed this and thought it was a great lightened-up recipe. The sauce is a tad grainy, but still a quite enjoyable substitute for a cream-based sauce. Flavor was great from the garlic and bacon. We will definitely make this again.

A really good recipe that uses things you probably have on hand, More filling than you might think. Super easy. You could fancy it up a little by adding frozen peas at the end, but my boyfriend hats peas, so I didn't. Will definitely make again.

Not bad! I took other reviewers advice and added 1 cup frozen peas. I forgot to add the 1/4 cup cooking water, so ended up with 3 portions. Can't say I would rush out to buy the ingredients to make this one again

I really wanted to like this. It was easy enough to make, but the sauce just did not have that "alfredo" creaminess and taste. It was a little dry so I added some pasta water. Won't make again...in the case I think having less of the real thing is better.

Light, fast, and tasty, even using skim milk (it's what I had). Only one comment...next time, I'll add a little more pasta water to the sauce. The fettuccine quickly soaked up the sauce making the dish a little dry. In spite of that one minor detail, this pasta dish is loaded with flavor. It's really nice being able to enjoy a white sauce pasta dish without the guilt of high calories and fat! Will be making this often and definitely would serve to guests.

A very good recipe, but I didn't like using the flour; it made it taste grainy. Another recipe I found used evaporated milk, which let me skip the flour. I think I'll do that next time. The garlic and the bacon were nice addition. I'll definitely keep this one!

I must admit, I have not made this yet. But I fully intend to! It sounds wonderful. However, at 9 points (on the Weight Watchers Points Plus plan), it's not actually very "light", especially for just a cup. So this will definitely end up being a main course recipe, with a green salad on the side.

I thought this recipe turned out really well. The bacon adds a nice smoky flavor to the dish. I added some baked chicken to this because I like to have a little bit of protein with my meal, and it was delicious! I'd recommend adding that if you feel the same way.

This is a great recipe. I nice alfredo that doesn't taste light. Personally I added a little more bacon for my husband and a cup of frozen peas to give it some veggie. Make sure everything is ready before hand.

The boyfriend liked this very much but as he says, "bacon makes everything better." I thought it was gummy and rather unappealing. I served it with a side of steamed asparagus for myself. I am going to keep looking for a lightened fettucini alfredo recipe that we both like.

I followed the recipe exactly, quality bacon, hand-grated fresh parmesano reg., etc. It had no taste at all. I've been a CL subscriber since 1994, and in the May '94 issue there was a fabulous "lightened" F A that I've served many times to rave reviews. This one just doesn't cut it, IMHO!

This will become part of our regular rotation. You'd never know it's a lower fat recipe. Definitely needs some sort of protein and a green veggie to make it a balanced meal. It was a bit stressful throwing it all together all at once, but with everything else done in advance it worked out fine.

Having made it once, I know now to have the ingredients prepped before even turning on the burner. All the "stirring constantly" leaves little time to measure. Overall, even though I over-browned the garlic, this dish was tasty and worth making again. I think grilled chicken and sun-dried tomatoes would really be great additions to this dish.

Wow - it's hard ot believe this is a "light" recipe! Amazingly flavorful sauce made with bacon and milk and cheese - everything you would normally ban from a low-fat diet, but when used sparingly gives so much flavor. For those who were complaining about sticky pasta - you can't blame the recipe for that. You should always rinse pasta with water (after cooking) to prevent sticking. For any of you who follow Weight Watchers, this recipe is 7 points per serving.

My husband was amazed when I suggested ALFREDO WITH BACON for dinner! But it came out great! Couldn't find fresh pasta at Trader Joe's, so I used packaged fettuccine instead, but it still tasted just fine. It only took about 30 minutes altogether. You get enough bacon flavor and aroma to feel indulgent, but it's not heavy at all! This was so easy. We'll definitely make this again!

This recipe was excellent!!! It quick and easy to make, and was a huge hit for the husband! You really do need to use quality cheese to produce a good sauce. I did make a few changes: used box fettuccine noodles, didn't use bacon and added sun dried tomatoes. The hardest part was grating the cheese. I will be making this again!

I'm not as enthusiastic about this recipe as others. I used a high-quality bacon (Niman Ranch Applewood Smoked), grated high-quality Roman Parggiano by hand, used fresh Italian parsley, and only substituted whole-grain fettuccine. It was OK--lots of better recipes in the database.

My family loved this recipe. We will definitely have it again. You could definitely serve this to company. It is sticky but real cheese sauces usually are that way. Adding more pasta water might help that but I didn't do that. The Jan/Feb 2010 issue of the print magazine reviewed brands of bacon on page 56. I used the recommended Niman Ranch bacon which I bought at Super Target for $4.49. I am sure you could use any bacon but that bacon was less salty and had a deep, rich flavor. I served thin cut skinless, boneless chicken breasts with smaller fettuccine portions. We also had broccoli and sliced apples.

I found this just okay, but it may be because I used turkey bacon and that didn't really yield bacon drippings. That may be why it didn't have much flavor. And the pasta WAS very sticky.

I will be making this again, it was very rich tasting for under 400 calories. I used whole grain pasta rather than the fresh to get some fiber in and sauteed spinach with shallots for a side. I also substituted fat free milk + 2tbl. heavy cream since I didn't have 1% on hand. The leftover pasta was even better the next day.

I found this recipe to be quite the guilty pleasure. Alfredo usually has a 1000 calories and this had less than 400 calories and included bacon! It was easy and tasty but I have to agree my pasta did stick but not like I think everyone elses did. Once it got into the sauce the pasta came loose and was covered by the sauce. I would make this again.

This recipe, if made with a bit more sauce, would earn 5 stars. As another reviewer stated the pasta was sticky which indeed it was; I will rinse my fettuccine after I take it out of the cooking liquid the next time I make this. Since we've reduced our sodium intake, I left out the 1/2 tsp salt as the sodium in the cheese was enough. I would make this recipe again.

this recipe is really good! My pasta was not sticky at all, but I did use just regular hard pasta. I did have to add a little extra salt and pepper to give it a little extra flavor. Besides that I was very pleased and will make it again.

We thought this was terrific! It was mighty sticky, but perhaps it is because I didn't rinse the pasta after draining it. The flavor is amazing, particularly for such a healthy dish....I suspect it may have something to do with the bacon drippings! We added some leftover rotisserie chicken that we needed to use up and it was perfect!
