DOES THIS HAVE TO SIT OVERNIGHT?
Yes, this is not an optional step. It has to sit overnight in the fridge so all the flavors can come together.
It is good when you try it immediately after making it, but nothing like when you try it overnight.
CAN I USE A DIFFERENT ONION?
I like to use a sweet onion for this recipe, and most recipes for that matter, because it adds a sweet note to the dishes I use it in. My favorite sweet onions are Vidalia.
I find when creating a recipe, you want to have all the main flavor elements highlighted. Sweet, savory, salty, and sour. In this case, the sweetness comes from the onion and a touch of sugar to help them caramelize faster.
But, if you don’t have sweet onions on hand, you can use yellow or white onions. I would double the sugar if using one of these.
DO I HAVE TO USE RAW GARLIC?
No, you don’t have to use raw garlic if you don’t want. You can add 1/2 teaspoon garlic powder in it’s place.
I love using raw garlic in dips and condiments because it adds such a punch of flavor. Plus, a little goes a long way. If you are one of those people that ignore the amount of garlic called for in a recipe, word of warning here, just use one!
HOW TO STORE:
Keep leftovers in an airtight container in the fridge for up to 1 week.
Place any leftover dip into an airtight container and place it into the freezer for up to 3 months. To thaw, place the container in the fridge overnight or on the countertop.
TIPS AND TRICKS:
- This a normal-sized batch for snacking, but to feed a crowd, you can easily double it.
- Other onions can be used, see above for how to do that.
- Add some cayenne, hot sauce, or chipotle powder to make it spicy.
- Make sure you let this sit in the fridge overnight, with no exceptions!
