I’m on a Mission! I am determined to keep my (and my family’s) nutrition in check despite our crazy, busy schedules! So this week I decided to get back on track and I would like you to join me on my Meal Prep Mission, first stop: Breakfast.When you think about meal prep and planning, you may forget that breakfast can be made ahead of time too. We are often so busy freezing dinners and saving leftovers that we forget that many of our favorite breakfast items have a good shelf life in the freezer or fridge! Here are a few healthy breakfast ideas that you can create ahead of time for a quick morning on the go!
Frittatas and Egg Dishes:These are my favorite and can last a few days in the fridge. There is a lot of protein from the eggs so you can feel fuller throughout the day. IF you are vegan, you can substitute the eggs for something else. Add spinach for iron and use fresh peppers for added nutritional value. Check out these favorite recipes:

Overnight Oats. Add variety to overnight oats with nuts and berries. It is a simple breakfast that you can prepare ahead of time. The idea in this no-cook breakfast item is to let old-fashioned oats combine with liquid and other mix-ins overnight in the fridge. It may not have the same texture as oats you prepare on the stove, but you have so much variety you will prefer this method more! Nuts are a proven superfood while berries will give you an energy boost. Try Greek yogurt as the soaking agent for your oats for a healthier swap as well. Here are some other quick & easy kid friendly ideas to try:
Breakfast Burritos. Beans might not cross your mind when it comes to breakfast, but they provide a good base for a breakfast burrito on the go. Try refried beans, pinto beans, or even black beans along with a variety of spices. Use brown rice, your favorite shredded cheese, and a tortilla shell. Prepare these ahead of time for easy storage in the fridge. Heat them up before serving and enjoy!
Egg Sandwiches. You probably catch yourself in a drive through in the morning more often than not, but you can skip that now! Make breakfast sandwiches ahead of time that you can freeze and eat them as you need to. The sandwiches are easy and require just English muffins, your favorite sliced cheese, cooked egg, and maybe bacon or sausage. Wrap them in plastic wrap before freezing. Thaw a sandwich overnight and heat it up before enjoying!
Gluten Free Breakfast Panini by Chocolate Runner Girl:
Easy Bacon Cups. I love to cook a batch of bacon cups on Sundays and enjoy throughout the week. Spray each slot in a muffin tin with non-stick cooking spray, and take a bacon slice and wrap around the inside of each slot. Crack an egg into each slot on the muffin tin and add your favorite seasonings like salt, pepper, and garlic. I like to throw in diced spinach leaves and sliced red peppers. Bake for 375 until done. Store in a tight container in your fridge to eat throughout the week.
