"Since we will most likely all be sent a 1099k, how do you all itemize it?" You may have been busy with the holidays and all, but last Friday, December 23, 2022, the IRS announced that they would be "delaying" the 1099-K reporting requirements for people who earned less than $20,000 from activities such as selling on eBay during 2022. If you have sold less than $20,000 on eBay during 2022, you will most likely NOT receive a 1099-K from eBay.
