This healthy legume is most often sold in the split variety which means it cooks very quickly, making it perfect for those last-minute meals. Red lentils are high in dietary fibre, vitamins and nutrients and have a mild taste. They are also a great way to add some non-meat proteins to your diet. Use them in soups, stews and dahls.

1 cup red lentils
3 cups water

How to cook red lentils
Step 1
Rinse and drain lentils.
Step 2
Place lentils in a small pot and cover with water. Add salt.
Step 3
Bring to a boil, reduce to a low simmer, then cover and cook for 8-10 minutes.
Step 4
Remove from heat and let rest until all water has been absorbed by the lentils.
Do red lentils need to be soaked before cooking?
No, there is no need to soak red lentils before cooking but it is a good idea to give them a quick rinse.
How long should I cook red lentils?
Cook red lentils for about 6-8 minutes if you’d like them to still be a little firm and tender and for 10 minutes or longer if you prefer them to go soft and mushy.
