How to Make Meatloaf in a Ninja Foodi
Aunt Lou here.
Momma’s meatloaf always has been and always will be one of my favorite recipes. So much so that I made it into a crock pot recipe AND had a blast doing a cooking video of the crock pot recipe with Mikey. It also freezes well, so if you don’t need as many servings, you can always freeze some to have a quick dinner for later! It only makes sense that I would give it a try in my Instant Pot! You guys are gonna LOVE this! Meatloaf has never been so easy!

Instructions
Mix together your ingredients (except the extra ketchup for topping and water) and mold into a loaf.
Make a dent down the middle of your loaf.
Place your loaf in a greased “boat” made of aluminum foil.
Top your meatloaf with ketchup.
Pour your water in your 6-quart Instant Pot.
Place your loaf boat in your instant pot (making sure the sides are much higher than the water).
Place the lid on your Instant Pot and seal. Set on the meat setting for 30 minutes.
Let it naturally release for 10-15 minutes. Quick release and serve! (If desired, put you loaf boat on a cookie sheet and broil on hi for about 90 seconds to 2 minutes to crisp up the edges and take your ketchup to the next level!)

Great recipe! i substituted crushed oyster crackers, bbq instead of ketchup, and added a tablespoon of oregano, basil, and parsley. Husband is part Italian and LOVED it 🙂

Thanks for this recipe. I added Italian seasoning and 1 clove of fresh chopped garlic. Yummy. I used the instant Pot Meatloaf pan and it was wonderful.

Made this for dinner tonight. I read on another site that I could cook green beans in the water underneath the meatloaf. They turned out great! I also used my mini egg bite pan for the first time for the meatloaf. Turned out GREAT! Thanks…Reply

Trying this tonight. Doubled the recipe(kind of by mistake) and using just the rack instead of the foil boat. Fingers crossed it turns out!

Did it work, I want to use the rack also.
Jessica says
Do you use “quick” oats or whole rolled oats? Either way, do you grind them up at all before adding? Thanks in advance! Sounds great and can’t wait to try it 🙂

Aunt Lou says
Hi Jessica! We use “old fashion oats” for this recipe. No grinding necessary! They work as a binding agent to hold the meatloaf together.
Enjoy!
Aunt LouJanie says
For ppl that dont like oats . Here something you can try . I use smashed corn flakes in my meatloaf. I use the generic corn flakes but you can use special k .

Also was wondering, to use rack, but recipe says set in water correct?

Hi Carmen!I haven’t tried using the rack with this recipe, but think that it should work. If you give it a try, let me know how it goes!

If I double the recipe, do I need to double the time? I’m new to Insta Pot, so not sure what to do.
Reply
Aunt Lou says
Hi Tonya!I haven’t tried doubling this recipe. We test every recipe before posting it, especially with the Instant Pot, and don’t like to make recommendations without trying it first. Be sure you use a meat thermometer when you try it the first time to ensure your meatloaf has reached safe temperature. If you give it a try, let me know how it goes!

I did a 2.25 lb meat loaf and cooked it for 1:15, after a 10 minute natural release, I did a quick release and broke it open to check the doneness… it was perfect and tastes great!Aunt Lou says
I’m so glad you enjoyed it Patricia! Thank you for letting us know how it worked with a larger meatloaf!
Vanessa Purdy says
When do you put the ketchup on the top of it? Im getting ready to make this now for dinner..thanks.

Aunt Lou says
HI Vanessa!I’m so sorry I missed your comment last night. Due to the high volume of comments we receive, we are not able to answer them all immediately. For future reference, you put the ketchup on top of your meatloaf right after you put your loaf in the aluminum foil “boat”. I have updated the recipe to show that. I hope you enjoyed it!

Joyce says
Can you put your aluminum foil package on the little rack above the water or must it be in the water?
Reply
Aunt Lou says
Hi Joyce!I haven’t tried this recipe using the rack, but think it should work. If you give it a try, let me know how it turns out!
