This light and fluffy Keto Vanilla Coconut Friands recipe is the perfect low-carb snack. These friands are delicate, sweet, sugar-free, and easy to bake.
If you haven’t heard of Friands before, they are small almond cakes baked in oval molds.
The word “friand” means “a tasty thing” in French – you know they’re going to be good with a name like that.
The Keto Friands recipe makes 12 serves. 1 serving is 1 friand and has 2g net carbs each.

- Add the egg whites to your stand mixer bowl, with the whisk attachment. Whip until they reach stiff peaks.
- Gently mix ⅓ of the egg whites into the other ingredients.

- Evenly spoon the batter between the 12 holes of your prepared friand tin. (Optional: sprinkle a little unsweetened shredded coconut on top for a garnish.)

Amazing !!! Easy to make, absolutely delicious. A real treat with a cup of tea. Will definitely be making again and may add in some raspberries to mix it up as these will become a weekly bake I imagine.Reply
I’m so glad you enjoyed the Katy! Thank you for you kind words 🙂

Anything you think we can use instead of the icing mix?

Hi Dawn,
You can use your preferred powdered sweetener.

So I have not heard of Friands but I am always game for little, lightly sweetened cakes! I will give this a try. Is there any reason I can’t use regular vanilla extract?

Hi Tara,
You can use whichever vanilla suits you best, extract or essence doesn’t affect the recipe 🙂
