You guys. This turkey corn chowder is a fun twist on a classic and the best way to use your Thanksgiving leftovers. It’s cozy, it’s creamy, and it’s officially one of my new favorite ways to use leftovers.
Ingredients
- Unsalted Butter– adds warmth and flavor depth.
- Yellow Onion, Carrot, and Celery– the classic “mirepoix” veggie blend which adds flavor and color.
- Sweet Potato– adds sweetness and a creamy texture.
- Sweet Corn and Creamed Corn– use canned varieties of both. Don’t drain! The liquid incorporates into the broth for the soup.
- Chicken Broth– a flavorful soup base.
- Dried Thyme, Dried Oregano, Garlic Powder, Paprika, Salt, Black Pepper, Cayenne Pepper, and Red Pepper Flakes – a sweet, earthy, and spicy seasoning blend. Omit the cayenne and red pepper flakes if you don’t like spice.
- Half-and-Half and Cornmeal– whisked together to form a slurry which helps thicken the soup for a creamier texture.
- Turkey– cooked and cubed. I just use my leftover Thanksgiving turkey!
- Cilantro and Sour Cream– for serving, if desired!
How to make
Simply throw all your ingredients into your slow cooker! The result is an ultra flavorful, super easy turkey corn chowder.
- Place everything except the half-and-half, cornmeal, turkey, and optional toppings into your crockpot then cover and cook onHIGHfor 3-4 hours or onLOWfor 7-8 hours.
- In a small bowl, whisk together half-and-half and cornmeal.
- In the last 30 minutes of cook time if cooking onHIGHor in the last hour if cooking onLOW, stir in the half-and-half mixture and cubed turkey. Cover and continue cooking.
- Serve with cilantro and sour cream and enjoy!
What turkey to use
I love to make this the day after Thanksgiving as a way to use my leftover turkey but any cooked and cubed turkey will work.
You could also use cooked chicken or ham if preferred!
How to thicken
The cornmeal and half-and-half slurry helps thicken the soup. It will also thicken slightly as it cools.
If it’s still not as thick as you would like it to be, you can make another slurry and slowly whisk that in or transfer it to a stockpot on the stove and let it simmer so some moisture can evaporate.
What to serve with turkey corn chowder
Since I like to make this using my leftover Thanksgiving turkey, I think it’s fitting to serve it alongside leftover sides! Or just make more sides because why not? 😉

- Dinner Rolls
How to store
Leftover turkey corn chowder will last in an airtight container in the fridge for 3-4 days or in the freezer for 2-3 months.
To reheat,thaw overnight in the fridge if frozen then warm on the stove or in the microwave until heated through.

Ingredients
US Customary - Metric
- 1/4 cup unsalted butter
- 1/2 yellow onion finely diced
- 2 carrots finely diced
- 2 celery stalk finely diced
- 1 sweet potato diced, about 1/2 pound
- 2 (15 oz) cans sweet corn undrained
- 1 (15 oz) can creamed corn undrained
- 3 cups chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoons garlic powder
- 1/2 teaspoons paprika
- 1 teaspoon salt more or less to taste
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper optional
- 1/4 teaspoon red pepper flakes optional
- 1/2 cup half and half room temperature
- 1/4 cup cornmeal
- 4 cups cubed leftover turkey
Optional Toppings
- cilantro
- sour cream
Instructions
Place everything (minus half and half, cornmeal, turkey, and optional toppings) into your crockpot
Cover and cook on HIGH 3-4 hours or LOW 7-8 hours.
In a small bowl, whisk together half and half and cornmeal. Set aside.
In the last 30 minutes of cook time if cooking on HIGH or last hour if cooking on LOW, stir in half and half mixture and cubed turkey. Cover and continue cooking.
Serve with cilantro and sour cream and enjoy!

Question, when exactly do you mix the corn meal with half & half? How much time should it sit before adding it to the crockpot. The way the recipe is written, it seems like you mix it at the time you fill the crockpot – or do you mix it at the last 30 minutes? Any advice is appreciated.
