1/4 tsp sugar
1/2 tbsp fresh curds (dahi)
1/2 tbsp melted ghee

- Naan is a popular Indian flatbread made using refined flour. It is cooked either in a Tandoor, oven or tava. You can give a variation to naan by adding ingredients like coriander, mint, paneer, garlic, etc.Listing down some popular naan recipes from our website :

For the dough
- For the dough of tava chilli cheese naan, take dry yeast in a small bowl.
- Add sugar to it. The yeast will feed on the sugar and release carbon dioxide, which will cause the dough to rise.
- Add 2½ tbsp of lukewarm water. Dip your finger in water to check the ideal temperature. Water that's too hot can damage or kill the yeast.
- Mix well and cover with a lid and keep aside for 5 to 7 minutes or till the dry yeast completely dissolves in the water. Covering prevents the dough from drying out.
- After 5-7 minutes, it would look like this. The frothy layer on top indicates that the yeast is activated. If the mixture doesn't foam, discard and start over with new yeast.
To Be Mixed Into A Stuffing
- To prepare the stuffing for tava mini chilli cheese naan, in a bowl take dry red chilli flakes. If chilli flakes are not available, make use of finely chopped green chillies. The quantity can be adjusted as per the spice you prefer.
- Add grated processed cheese.
- Add ½ cup cooked rice. Preferably make use of leftover rice that is cold. If preparing rice freshly, then either cook them in a pressure cooker or directly on a stovetop. Also, you can make use of any variety of rice grains but, small grains with more starch can help in binding together all the ingredients well.

Dough for chilli cheese naan
- To make dough for chilli cheese naan without tandoor, in a deep bowl take plain flour. Ensure you make use of a big bowl as the dough will rise and you do not want it to get messy.
- Add yeast-sugar mixture. Many people including Jains do not prefer using yeast. Baking powder along with baking soda is a great alternative to yeast.
- Add curds. Curd acts as a leavening agent and helps in making soft and crumbly cheese naan.
- Add melted ghee.
- Add salt and mix well.
- Knead the dough until it is smooth. If required, add lukewarm water but make sure the dough is soft but not sticky.
- Cover the dough with a lid or damp muslin cloth and keep aside to prove for 30 minutes or until it increases in volume slightly.
- After 30 minutes, you will notice our dough has risen.
How to proceed
- Deflate the dough and knead the dough again to remove the excess air. Divide the dough into 10 equal portions.
- Take a portion of the dough and roll into a 75 mm. (3”) diameter circle using a little plain flour for rolling. Keep the rest covered to prevent them from drying.
- Place a portion of the stuffing in the centre of the circle.
- Bring together all the sides in the centre similar to the money bag.
- Seal tightly so the stuffing is secure inside.
- Roll again gently into a circle of 50 mm. (2”) diameter circle with a little plain flour for rolling. Don't roll it too thin or too thick. The folds made from sealing should no longer be visible and there should not be any gaps where the cheese stuffing can escape from.
- To cook chilli cheese naan on tava, heat a non-stick tava (griddle) and place the naan over it.
- Cook cheesy chilli naan bread on one side till it puffs slightly.
- Then turn over and cook it on the other side till it puffs a little.
- Finally, roast it on an open flame till it turns golden brown in colour from both the sides.
- Remove cheese stuffed naan on a plate and keep it covered until you are done with the rest of the naans.
- Repeat steps 2 to 11 and make 9 more chilli cheese naan without tandoor.
- Brush each naan with ½ tsp butter.
- Serve chilli cheese naan immediately.
