I don’t know about you guys, but when it comes to making meals to serve to a houseful of people, I’m all about finding recipes I can prep ahead. If I can make something the day before an event, party or celebration, I feel about 10,000 times more relaxed on the day of the gathering since I’m able to focus more on family and friends and less on cooking and preparing food to everyone to enjoy. If you are the same way, I have a delicious recipe to share with you guys today that you might want to keep on your radar for Easter brunch. It combines two breakfast favorites — eggs and English muffins — in a casserole that’s fluffy and cheesy and majorly crowd pleasing!

I’ve been working on perfecting this recipe for Overnight English Muffin Breakfast Casserole for a while but it wasn’t until my parents came to visit a few weekends ago that I felt like I could officially say I nailed it. Everyone raved about the casserole and none of us could resist going back for seconds. Always a good sign!

I did all of the shopping for theOvernight English Muffin Breakfast Casserole at BJ’s Wholesale Club and was so impressed with the prices on everything from their organic Wellsley Farms whole milk ($6.99 for two 32-ounce cartons!) to the organic free-range eggs. I actually first began “shopping” at BJ’s through their grocery delivery service at the beginning of the year and I use “shopping” in quotations because I’m convinced that as a mom of two boys there’s nothing better than ordering groceries online and having them delivered to my front door. I’ve become a bit of a grocery store nerd and constantly compare the price of our family staples at the different stores in our area and BJ’s is consistently one of the most affordable options! When you’re shopping in-club, they also allow you to combine coupons from manufacturers on top of BJ’s exclusive coupons and you can even digitally add coupons to your card via the BJ’s app making the potential for savings even greater.

When it comes to the quality of BJ’s exclusive brands, I’ve been very impressed with the natural and organic products by Wellsley Farms. Some of my favorites include theirorganic coconut oil,organic salsa, organic blue corn tortilla chips (I love them crushed on top of my crockpot chicken corn chili) and organic chia seeds.

For this particular recipe, I hopped around BJ’s and grabbed a handful of fresh veggies from the produce section before nabbing organic eggs, organic whole milk and shredded cheese, along with pink Himalayan salt, turkey bacon, English muffins, garlic powder and pepper to bring home to whip up into a savory casserole my whole family loved! If you’re going to recreate this recipe at home for a special occasion, I highly recommend adding some organic orange juice and a bottle of Wellsley Farms Prosecco to your cart as well because this casserole pairs perfectly with mimosas. Just sayin’.

The English muffin base of this recipe was wonderful because the nooks and crannies of the muffins held up well against the eggs and soaked up the eggs perfectly, preventing the casserole from becoming a soggy mess. They somehow allowed the Overnight English Muffin Breakfast Casserole to be both fluffy and filling and when paired with sauteed turkey bacon, shredded cheese, onions, mushrooms and peppers, the casserole became the kind of recipe worthy of a special occasion. Break out the mimosas!

While we loved the recipe as-is, it’s the kind of recipe that allows you to play around with the additions a little bit. If you’re not feeling turkey bacon, you can omit the turkey bacon or substitute Canadian bacon or sausage in its place to suit your flavor preferences. Not a fan of mushrooms? Description

A perfectly fluffy and deliciously cheesy recipe. Perfect for a special occasion or a lazy Sunday morning.

Ingredients

1/2 onion, diced

1 cup chopped mushrooms

1 bell pepper, diced

12 strips turkey bacon, chopped

12 large eggs

2 1/2 cups organic whole milk

1 teaspoon garlic powder

1 teaspoon salt

pepper to taste

1 1/2 cups shredded Mexican cheese

Instructions

  1. Cut the English muffins into 1-inch cubes and set aside. (Do not halve them horizontally before cutting them into cubes.)
  2. Sauté onion, mushrooms, bell pepper and turkey bacon in a large non-stick skillet until vegetables are tender.
  3. In a large bowl, whisk together the eggs, milk, garlic powder, salt and pepper.
  4. Spray a 9×13” baking dish with cooking spray and pour half of the vegetable/bacon mixture into the bottom of the dish. Sprinkle 3/4 cup of the cheese on top.
  5. Top the vegetables and cheese with the English muffin cubes in one even layer.
  6. Pour the egg mixture on top.
  7. Top with remaining vegetables/bacon and sprinkle with remaining cheese. Cover and refrigerate overnight.
  8. Before baking the next day, preheat oven to 350 degrees, uncover the casserole and let the casserole come to room temperature for 15 minutes.
  9. Bake for 60 minutes or until casserole is puffed up, lightly brown on top and cooked through in the middle.
  10. Allow to cool for 5-10 minutes before slicing and enjoying!
