I often make various kofta recipe, cutlet recipes for quick snack or even breakfast. This paneer kofta is loaded with veggies, mildly spiced and absolutely delicious. Paneer kofta recipe is a very adaptable one. You can easily change the ingredients as per taste and make different flavored paneer koftas. If you do not want to use bread, you can use corn flour, rice flakes, crushed oats or even any soaked millet to make paneer koftas.
To make paneer kofta recipe, here I have used onions and capsic*ms. You can add grated cabbage, carrot, colored bell peppers, corn kernels, very finely chopped beans or broccoli. Use white bread or wheat bread or brown bread for binding the paneer kofta. The spice powders that go into the making of paneer kofta are cumin powder, pepper powder and a little chaat masala. You can add any flavoring of your choice. You can use Indian spice powders or something completely like dried basil or parsley.
Serve paneer kofta hot along with coffee. You can use these paneer koftas to make paneer kofta curry too.

Step by step paneer kofta recipe.
1. To a mixing bowl, add grated paneer, chopped bell pepper, onions. Mix well. Add crushed ginger and green chilies. Mix well.
2. Dip the bread slices in water and squeeze immediately. Add the bread slices to paneer mixture and mix well.Add salt. Add cumin powder and chaat masala powder. Ad mint leaves and lemon juice. Mix well.
3. Mix well and make a dough. Divide the paneer kofta mixture into 10 eual sized portions. Shape each portion into a kofta.
4. Heat oil for deep or shallow frying. Fry the shaped koftas in batches. Fry until golden brown from all sides. Serve paneer kofta hot or make paneer kofta curry.
Vegans can make tofu kofta by replacing paneer with grated tofu.

Ingredients
- 1 cup grated paneer or tofu
- 2-3 bread slices
- 1 onion chopped
- 1/2 bell pepper chopped
- 1/2 teaspoon minced ginger
- 2 green chilies crushed
- 6-7 mint leaves
- 1/2 teaspoon lemon juice
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chaat masala powder
- Salt
- Oil

Notes
1. You can add boiled potatoes instead of bread. You can add rice flakes or corn flour too.
2. If the paneer is very fresh, you can just crumble it with hand.
