It is not optional. eBay determines when an item will be authenticated, so you can not remove it. It is not something you have to set up - if you list a qualifying item in a qualifying category, eBay adds it.
If you had an item that showed the authenticity guarantee, but then when directly to the buyer, something about the transaction disqualified it. Was the buyer registered outside of the US? Was his address a P.O. Box? These are the most common reasons for the change.
