- Smoky Flavor – I love popping sides and appetizers on the Traeger for a couple of hours. They slowly absorb the smokiness from the pellets and it makes them even more delicious!
- Easy – I love how easy Buffalo Chicken Dip is to make! Just throw it all together and go! I’d never had this dip until I moved to Ohio – and wow – was it a game changer!
- Rotisserie Chicken – a rotisserie chicken has 4-5 cups of meat depending on the size – so you can have a bit for a sandwich (or the dogs) and then use the rest in the dip!
Ingredients for Buffalo Chicken Dip
This Buffalo Chicken Dip recipe has pretty simple ingredients. For me – I just have to buy the Rotisserie Chicken and the rest is in the pantry. Here’s what you need:
- 4 cups cooked chicken, roughly chopped
- I used a rotisserie chicken. I peeled the skin off and took all the meat off the bones. Then roughly chopped into bite-sized pieces
- 16 oz Buffalo wing sauce (or a hot sauce like Frank’s) – I like Kroger of Sweet Baby Ray’s Wing Sauce
- 16ozcream cheesesoftened, diced – let it sit out on the counter for an hour or so
- 1 cupranch dressing (or sour cream) – I made ranch from the seasoning mix, mayo & milk for this recipe
- 16ozcheddar cheese block,grated
- 1/3cupcelery,finely diced
- 4 oz blue cheese crumbles
Recipe Variations
You can tweak the recipe based on what you have – here’s a few easy changes:
- Smoked Chicken – instead of a rotisserie chicken – get more smoky flavor by using smoked chicken like this Beer Can Chicken
- Chicken Breast– you can use 2-3 cans chicken breast or 3-4 chicken breasts (poached & shredded)
- Green Onions– don’t have celery? Chopped green onions work as well for that fresh crunch!
- Spicy– make it spicier by using pepper jack cheese instead of cheddar

How to make Buffalo Chicken Dip on the Traeger
It’s so easy to make – put it all in a bowl and stir it up! Then onto the Traeger!
- Preheat smoker to 300ºF. Spray baking dish or disposable pan with non-stick cooking spray.
- In a large mixing bowl, add shredded chicken, buffalo sauce, cream cheese, ranch dressing, cheddar cheese and half of blue cheese. Stir to combine.
- Pour chicken mixture into pan.
- Place on smoker for 60 minutes. Open the smoker and stir to combine.
- Close the smoker lid and smoke for another 60 minutes.
- Remove from smoker. Top with diced celery and remaining blue cheese.
- Serve with tortilla chips.

How do you store and reheat leftover buffalo chicken dip?
Store leftovers in an airtight container (I like these glass storage ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat 1/2 cup portions in the microwave for 1:30 minutes.
What can you serve with besides tortilla chips?
Celery sticks, carrot sticks, corn chips, baguette slices all work as great delivery tools for buffalo chicken dip!
What can I do with leftover buffalo chicken dip?
You can use chicken dip in quesadillas, as a topping for baked chicken, use it as a filling for hard shell tacos, as a topping for a baked potato or double down on the buffalo chicken and use it as a dip for chicken wings!
Can you make Buffalo Chicken Dip in a slow cooker?
Definitely! Instead of placing on the smoker – just place in your crock pot on low for 4 hours – stirring every 2 hours.
Can I cook this more quickly on the Traeger?
Yes – feel free to turn the heat up to 350 and cook it in an hour. It just won’t absorb as much of the smoky flavor.
Can you smoke foods with a charcoal grill?
Yes – you can place a packet of wood chips in aluminum foil next to the charcoal. You will need to change out the wood chips every 30-60 minutes to keep the smoke coming.

Ingredients
