This turkey shepherd's pie recipe can be made with ground turkey and is extra delicious when made with leftover Thanksgiving turkey.

- sour cream - low fat is fine but I prefer full-fat sour cream
- butter - unsalted
- salt
- olive oil
- carrots - peeled and diced (if you have extra carrots be sure to add carrot souffle to your menu!)
- celery - washed and diced
- onion- fine diced

- garlic- minced or use garlic confit
- ground turkey - lean ground turkey

- rosemary - dried
- thyme - dried
- black pepper
- flour - all-purpose. Learn about the different baking terms and why the type of flour matters.
- chicken broth - use low sodium chicken broth in a box or make your own chicken stock.
How to make Shepherds Pie Recipe with Ground Turkey
- Preheat oven to 400 degrees and spray a 7x11 casserole dish with nonstick cooking spray.
- Put potatoes in a pot and cover with water. Bring to boil until the potatoes are tender. Drain and return to the pot. Add in sour cream, butter, and ½ teaspoon of salt; mash until smooth. Set aside.
- Heat olive oil in a large skillet. Saute carrots, celery, and onion until softened. Stir in corn and garlic and cook for 1 minute. Transfer to a bowl and set aside.
- Add turkey, rosemary, thyme, and salt to the skillet and cook until the turkey is cooked through.
- Stir in tomato paste and return carrot mixture to the skillet. Stir in flour and broth and simmer until it thickens.
- Transfer turkey mixture to your casserole dish and top with mashed potatoes.
- Bake for 35-40 mins or until the potatoes are browned to your liking.
- Cool for 15-20 mins to allow the turkey mixture to thicken.

Can leftover turkey be substituted for the ground turkey?
Absolutely! I would add 2 cups of cooked, chopped turkey to the recipe. Warm the chopped turkey with the spices in place of cooking the raw ground turkey.

You can prep this casserole up to 2 days in advance. Cover it and refrigerate it unbaked. Just add a couple more minutes to the baking time so it is heated through.

Instructions
