Quick and easy Valentine's Day cookies (love letter cookies), homemade with simple ingredients. All you need is sugar cookies or graham crackers, marshmallow fondant and edible markers.

These cookies are easy enough for kids to make and they are so much fun! It gives the kids a chance to get very creative with their designs. They are just as easy as these super popular Valentine's Day Fruits.

How to Make Valentine's Day Cookies (Love Letter Cookies)?

1. Spread corn syrup on top of cookie- Icing can be used instead.
2. Roll out fondant- Any color can be used.
3. Place cookie on fondant- Sticky side down.
4. Cut off excess- Use a sharp knife.
5. Decorate- With edible markers and heart sprinkles and enjoy.

Variations for Valentine Cookies

Valentine sugar cookies- Instead of graham crackers, use Cut Out Sugar Cookies. Use a rectangle cutter or square cutter to get the envelope shape.

Try other cookies- Such as Chocolate Sugar Cookies or Best Shortbread Cookies. Just make sure it's a cut out cookie recipe.

Flavor fondant- Add any extracts of your choice. Use clear extracts if you want pure white fondant because the regular extracts can discolor it.

Color fondant- Use gel colors because they are thicker and more concentrated than liquid food coloring.

Do piping work-If you are good with piping, you can make the same design withRoyal icingorGlace icing, using various tips. It will be a more tedious and time-consuming process though.

Use frosting instead of corn syrup- The main purpose of cron syrup is to work as a "glue" to stick fondant onto the cookie. This can easily be replaced with American Buttercream Frosting.

Use other sprinkles- I used small heart sprinkles but you can use whatever design of sprinkles you like. You can even make your own unique Homemade Sprinkles.

Tips and Techniques for Easy Valentine's Day Cookies

Where to find edible markers? They can be found in the cake decorating aisle of most large grocery stores. I like the Americolor brand because it has a fine tip.

Homemade fondant vs. Store-bought fondant- Either can be used. I prefer homemade fondant because it tastes and smells amazing. However, store-bought fondant is great when you are short on time plus it can be bought pre-colored.

Don’t decorate warm cookies-If you are using freshly baked cut out cookies, they need to cool down completely or else the decorations will become a sticky mess.

Let the fondant covered cookies dry-Allow them to sit at room temperature for 20 minutes and then write on it. If you don’t do this, the tip of your marker will make deep dents in your soft fondant.

Go slow and steady-Any mistakes with the marker cannot be reversed. You would have to peel off the fondant and start over again.

Don’t use a lot of corn syrup– Its main purpose is to work like a “glue” to stick fondant onto the cookies. A small quantity goes a long way. Using a large quantity causes it to leak out from the sides and look messy.

Storage

Room temperature- This is the best way to store these decorated cookies. Keep them in a covered box for up to 3 days.

Refrigerate- This is not recommended a lot because the moisture from the fridge can make fondant decorations sticky.

Freeze- Decorated fondant cookies cannot be frozen because the moisture in the freezer makes the fondant very sticky, upon thawing.

Craft Paper Version

If you don't want to make cookie envelopes, you can use craft paper and fill them with red or pink m&m candies.

1. Use scissors to cut out a house shape out of pink construction paper/craft paper.
2. Fold the pink house shape, as shown in this picture and staple the sides.
3. Fill the little pocket with red candies.
4. Use scissors to cut out a small heart shape out of yellow construction paper/crafting paper.
5. Fold the top triangular flap and stick the heart piece in the center, using some glue. Enjoy!

Instead of m&m's, fill them with small seasonal heart chocolates or other candies of your liking. I kept these envelopes very simple but feel free to go wild! Try different colors and textures of craft papers. Draw or paint on them or even use stamps on them! Use stickers or even little buttons instead of cutting out heart shapes.
