-Select the Tools menu > Activity Dashboard. The viewing history of each person the file is shared with is displayed in the “Viewers” section. Those who have a dash next to their name either have not viewed the file or have opted out of having their viewing activity shown.
If you don't see Activity dashboard or the privacy settings: If the file isn't owned by a Google Account through work or school, no one can see the view history.
File activity includes the names of users who have viewed Google Docs, Sheets, and Slides files and the time they viewed them. Using this data, file editors can make informed decisions about following up with collaborators.
Any web browser—Go to sheets.google.com. Google Drive—Click New. Google Sheets and create from scratch or from a template. Most Google pages—In the upper-right corner, click the App Launcher.
When you use Google sites, apps, and services, a record of some of your activity is saved in your Google Account. You can easily access and control this activity, where you can find and delete them in My Activity.

The version history shows all the changes from the creation of the document. People with only "Viewing" access to the file cannot see the version history.
