Delicious Low Carb Cauliflower Recipes
Cheesy Cauliflower Fritters (Pictured to the right) - Oh man are they good!
Many people are looking for delicious cauliflower recipes because cauliflower is such a healthy vegetable and it taste so good too! Cauliflower is low carb, highly nutritious, may protect against cancer, and makes an excellent replacement for potatoes, rice, pizza crust, and more!
On this page, you'll find my own Cheesy Cauliflower Fritters recipe as well as several other cauliflower recipes including a fabulous low-carb cauliflower-crust pizza recipe, and a delicious low-carb wrap too!

Yields: Makes about 8 to 10 small fritters.
Ingredients
- 2 cups of cauliflower
- 1 egg
- 1/3 cup grated cheddar cheese (I use reduced fat cheese)
- 1/2 onion
- salt and pepper
- olive oil or other oil for sauteing
Instructions
- Cut cauliflower into small pieces. (After cutting the amount you'll need off the head of cauliflower, cut each piece into 2 or 3 smaller pieces.) Place it in a steamer basket over a pot of water and steam on the stove for about 5 to 7 minutes, until tender. (See tip below.) While the cauliflower is steaming, cut the onion finely. Saute the chopped onion in a little oil on a skillet.
- In a medium sized bowl, place the cheese, egg, and a little salt and pepper (3 or 4 twists with salt and pepper grinders should be plenty). When the cauliflower and onions are ready, add them to the bowl. Stir. It's okay if the cheese starts to melt a little from the heat of the cauliflower and onions! That will help hold the fritters together!
- Spoon the mixture onto the skillet. Cook until golden brown on the bottom, then flip the fritter over and cook the other side.

Tip
If you'd like to avoid using more than one pot / pan (to save on cleanup), cook the onions and cauliflower together on a skillet with a little olive oil. When they are tender, add them to a bowl with the egg, cheese, salt, and pepper. Mix them well, then cook them as fritters on the same skillet.
Another Tip
Sometimes, if I'm not feeling like standing near the stove a long time making a bunch of little fritters, I pour ALL the batter at once onto my pan and cook it as one large piece. When it is ready to be flipped over, I use the spatula to cut it into 4 to 6 pieces, and flip each piece one at a time. They don't come out as little cauliflower fritters, but they still taste delicious!
Low-Carb Cauliflower-Crust Pizza! - This pizza is sooo delicious!
I love this low carb cauliflower-crust pizza! In fact, I think it's better than regular wheat crust pizza! I'll definitely be making this recipe again! In fact, I may try making bread for other things (like tortillas or flat bread) in a similar manner. It was so good!
Notes: I used fresh cauliflower and did not precook it. In addition to the herbs the recipe calls for, I sprinkled sea salt, black pepper, and a small amount of crushed red pepper on the pizza crust. I cooked the crust longer (about 10 minutes more, perhaps - but I checked it often), before topping it. The toppings I used were orange bell pepper, red onion, and Mozzarella cheese. After removing the pizza from the oven, I sprinkled on some Italian Seasoning.

Low Carb Cauliflower Wrap
I tried the Low Carb Cauliflower Wraps from Empowered Sustenance today, and really enjoyed them! I'll definitely be making these again! In mine, I put hummus, sliced avocado, orange bell pepper, onion, lettuce, and Jarlsberg cheese. It was delicious!
Oh, by the way, I didn't cook my cauliflower in water as the directions state. After I "riced" it in the food processor, I cooked it on a skillet with a little bit of extra virgin olive oil.
