Clean Eating Soft Pretzels Recipe | The Gracious Pantry (1)

Once upon a time, there was a little mouse, who lived in a little house by the edge of the sea.

He loved bread with all his heart, and his morning would not start,
until with a baguette from the house he could part.

But this small little mouse with the large baguette, was often vexed and beset. For when he ran low and needed more, he’d often have trouble squeezing baguettes through his door.

Until one day to his delight, he discovered a pretzel. Such a beautiful sight! With the greatest of ease, it slipped through the door, and now our little mouse, is vexed no more. He nibbles his pretzel and sips his tea, that tiny little mouse, in the house by the sea.

– By Tiffany McCauley and Mini Chef

Mini Chef was begging me for some pretzels.I don’t keep them in the house because I can never find any store-bought pretzels that are clean. So instead, I did a quick google search for whole wheat pretzels and found a wonderful recipe that needed very little tweaking to make it clean.

Now, whenever Mini Chef and I bake together, I always make sure that I give him his own piece of dough to knead and play with. Because inevitably, it will end up on the floor and I don’t want that to be the fate of the entire batch of dough. So he always gets his own.

While he was kneading his dough, he was telling me a wild and crazy story concerning spaceships, hammers and his commission. I’m still not sure what that story was about, but somehow, he ended his story with a mouse in a house. The whole thing spiraled out from there, and the result is the little story you just read above.

As for this recipe, it’s is a keeper for sure! The pretzels turned out very soft and tender and the flavor is warm and inviting like most whole grain products are when they are fresh out of the oven. The kitchen smelled like an old fashion bakery!

These are actually more like a soft dinner roll. I love them! The possibilities with this recipe are endless really.

And if the idea of making bread scares you, don’t let it. This is very simple to make. And just for the record, these are also definitely Mini Chef approved!

Total Time: 1 hour hour 50 minutes minutes

Servings: 13 pretzels

Calories: 178kcal

Ingredients

  • 1 packet rapid rise yeast
  • 3 tbsp. honey
  • 1 ½ cups warm water (between 105-115 degrees F.)
  • 4 ½ cups whole wheat pastry flour (affiliate link)
  • ½ tsp. salt

US CustomaryMetric

Instructions

  • Line two cookie sheets with parchment paper.

  • Combine the warm water and honey in a medium bowl and stir until honey is dissolved.

  • Pour in the yeast, stir very briefly just to incorporate, and set aside so it can foam.

  • In a large mixing bowl, whisk together the flour and salt.

  • Add the oil and the foamy yeast to the flour bowl and mix with a wooden spoon until it becomes to thick to continue.

  • Knead by hand for about 10 minutes. The dough will be very sticky, but after kneading for about 3-4 minutes, it should become a nice, smooth dough. It will still be sticky, but should not leave any dough behind on your hands. (You may need to stop and wash your hands first and then continue kneading to be sure.) If the dough continues to stick to your hands, add 1 tbsp. of flour more to the dough. Knead well. Repeat if necessary.

  • Now you can shape your dough as shown. The cord of dough in picture 1 is approximately 1/2 inch thick and approximately 14 inches long.

  • Once you have all of your pretzels formed and on the cookie sheets, cover the sheets with a towel and let them sit for 1 hour. When you come back, they should be nice a “fluffy” (doubled in size).

  • Preheat your oven to 425 degrees F.

  • Now you can brush on the egg wash, sprinkle them with seeds and bake for 15-18 minutes or until golden brown.

  • Allow to cool and serve.

FAQs

What is the best salt for homemade soft pretzels? ›

Ideally, you would use pretzel salt when making pretzels. But this type of salt is not always easy to find in the store. That's why many people turn to kosher salt instead. And indeed, these two types of salt have a lot in common.

What is the purpose of putting an egg wash on the pretzel? ›

Egg Wash – The egg wash on the pretzels gives them a little shine, and I find it softens the exterior a bit. For a more traditional taste, omit the egg wash and just use salt when the pretzels come out of the water bath.

What is the drain cleaner in pretzels? ›

Traditional Bavarian pretzels are dipped in a lye solution before they are baked. Lye, also known as sodium hydroxide, is essentially the same stuff that's used to make soap and clean drains. It can even dissolve glass.

What does the baking soda solution do for the pretzels? ›

As noted above, baking soda is a staple ingredient for making homemade pretzels. Dunking your pretzels in a baking soda bath prior to baking is what enables them to develop their distinctive color and crispy-on-the-outside, chewy-on-the-inside texture.

What makes soft pretzels taste like pretzels? ›

The answer lies in a brief dip in an alkaline water bath before baking. This bath essentially gelatinizes the outside of the pretzel, preventing it from fully “springing” during baking (as bread does) and giving pretzels their signature chewy crust. It also gives them their unique and indelible “pretzel” flavor.

What kind of mustard is good for soft pretzels? ›

Dijon mustard or a spicy brown mustard are the typical go-tos, as they add an extra kick to your pretzel snack. However, you can also get the best of both worlds by choosing a cheesy mustard dip.

What can you use instead of egg wash on pretzels? ›

Examples of ingredients used in egg wash substitutes include: Milk, cream or butter. Water. Vegetable or olive oil.

Can I use butter instead of egg wash? ›

Butter gives baked goods the same golden, crispy finish as egg wash, with the added benefit of tasting like, well, butter. To proceed, first melt the butter over low heat—being careful not to brown it—and then use a pastry brush to sparingly apply an even layer to the soon-to-be-baked item.

What is the brown stuff on pretzels? ›

Lye is primarily used to make pretzels, and it's the reason for their unmistakable shiny, mahogany color. To prepare, shaped pretzels are dipped in a lye bath, then baked in the oven. This method can also be used with rolls or buns.

What can I use instead of food grade lye for pretzels? ›

The most benign substitute for lye is baking soda. You'll get a little bit of browning and some chew, but don't expect it to taste very pretzel-y. You can also used baked baking soda, which is a stronger alkali than baking soda but not as caustic as lye.

Why is lye safe in pretzels? ›

The stronger the alkali, the more intense and impressive the results, which is why German bakers use lye; it features a chart-topping pH of 14 and produces the ultimate pretzel experience. (Rest assured, you're not ingesting a dangerous chemical: The oven's heat completely neutralizes lye and makes it safe to consume.)

What country is famous for making pretzels? ›

Its origin is often attributed to Germany, specifically to the region of Bavaria, although its precise beginnings are somewhat debated. The pretzel was invented by European monks in the early Middle Ages, possibly in the 6th or 7th century.

Is lye or baking soda better for pretzels? ›

Lye has a pH of around 13 whereas baking soda has a pH of around 8. This extra alkalinity accelerates the Maillard reaction, allowing that caramelization to develop on the exterior of the pretzels. That ultra deep color and slightly crispy, crunchy exterior crust is only made possible with lye.

Why do my pretzels taste metallic? ›

Why do my pretzels have a metallic taste? If your pretzel bites have a metallic taste, this could be from the baking soda in the boiling step (don't skip this step, you need it!). You may want to try a different kind of baking soda (I use Arm & Hammer Baking Soda). But it could also be from your egg wash!

What's the difference between pretzel salt and regular salt? ›

Pretzel salt is typically made up of larger salt crystals, which adhere well to the surface of the dough and provide a satisfying crunch when bitten into. Its unique texture and flavor make it an essential ingredient for finishing authentic pretzels and other types of bread.

How to keep salt on soft pretzels? ›

Lightly spray (mist) the tops of the pretzels with cool water from a distance of at least at least 18”. You don't want to soak the skin, just moisten it. LIGHTLY Sprinkle the Pretzel Salt provided to have a small amount on each pretzel. You can re-use any salt that falls off onto the sheetpan after your baking process.

Can you use Himalayan salt to make pretzels? ›

Brush the pretzels with the egg wash and then sprinkle with the Himalayan salt and caraway seeds. Bake for 15 minutes or until golden brown.

Can you use kosher salt on soft pretzels? ›

Brush a thin layer of egg mixture over pretzels; sprinkle with kosher salt. For cinnamon and sugar pretzels, omit the salt completely.
