1/2 lb. ground beef, browned
6 cups macaroni, cooked
2 cups American cheese
1 can (15 oz.) tomato sauce
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt (to taste)
Instructions
- Preheat the oven to 350°.
- In a casserole dish, mix the browned ground beef with macaroni and add cheese. Stir until melted.
- Add the tomato sauce, garlic powder, onion powder and salt.
- Bake for 20 minutes.
Notes
*When I am in a hurry I drain the macaroni and then add the hamburger and cheese, along with the rest of the ingredients into the same pan I cooked the macaroni in. Then I stir until the cheese is melted.

1/2 to 1 lb. ground beef*
1 can cream of chicken soup
1 small can tomato sauce
1 small can green chiles, chopped
8 to 16 oz. cheese, grated*
12 corn tortillas
green onions for garnish
Instructions
- Preheat oven to 300°.
- Brown the ground beef in a frying pan.
- Drain.
- Add the soup, tomato sauce and chiles.
- In a casserole dish or baking pan, layer the tortillas, meat mixture and cheese.
- Bake for 30-45 minutes.
- Garnish with green onions or cilantro before serving.
Notes
This recipe is very flexible. You can adjust the hamburger and cheese to what you have on hand. I use cheddar cheese but you can use Monterey Jack, Mexican mix or any combination of cheese you want.
You can also add other Mexican themed ingredients like chopped onions or black olives.

1 Tbsp. taco seasoning
1 (15 oz.) can pinto beans, rinsed and drained
salt and pepper (to taste)
2 cups red enchilada sauce
2 1/2 cups shredded cheddar cheese
1–2 tomatoes, sliced (optional)
1/4 cup green onions, sliced (optional)
Instructions
- Preheat the oven to 350°.
- Brown the ground beef in a frying pan, about 6-8 minutes.
- Add the taco seasoning, beans and salt and pepper to taste. Stir to mix the ingredients.
- Grease a 2 quart baking dish.
- Spread 1/4 cup of the enchilada sauce on the bottom of the baking dish.
- Layer one third of the tortillas over the sauce.
- Add half of the meat mixture.
- Then add 3/4 cup of cheese on top of the meat.
- Pour 1/2 cup of the enchilada sauce over the cheese.
- Repeat the process with 1/3 of the tortillas, the rest of the meat mixture, 3/4 cup of cheese and 1/2 cup of sauce.
- Add the final 1/3 of the tortillas on top of the casserole.
- Pour the remaining sauce over the top of the tortillas.
- Sprinkle on the rest of the cheese on top.
- Cover the casserole with foil and bake for 30 minutes.
- Uncover and bake for an additional 5-10 minutes or until the cheese is melted and browned.
- Let the casserole sit for 5 minutes before cutting. If desired, you can garnish with tomatoes and green onions over the top.

1/2 cup rice, uncooked
1/2 cup soy sauce
1/2 cup water
1 (4 oz.) can mushrooms

1 small can bean sprouts
1 small can sliced water chestnuts
Chinese noodles
Instructions
- Preheat oven to 375°.
- Brown the hamburger and onions in a frying pan.
- Mix all of the remaining ingredients except the Chinese noodles together into the hamburger (including the liquid from the mushrooms and bean sprouts).
- Place the mixture into a greased 9×9 inch baking pan.
- Bake for 1 1/2 hours.
- Top with the Chinese noodles.
Double the amount of the ingredients for a 9×13 inch pan.
Note: This recipe takes longer to cook because of the uncooked rice. You could use 1 1/2 cups of cooked rice but, if you do, don’t use the liquid from the mushrooms and bean sprouts. That will cut the cooking time in half.
- Use Ramen noodles or instant rice in your casseroles. This makes preparation easier since you don’t need to cook these before you add them to the dish.
- If you have time, roast your veggies before adding them to your casserole for some added flavor.

- In a mixing bowl, combine the cream of mushroom soup, milk and salt and pepper (to taste). Mix well.
- Peel and slice the potatoes.
- Add to the mixture. Set aside.
- Spray a 9×13 inch baking dish with non stick spray.
- Layer half of the beef, half the potato mixture and 1/2 cup of the cheese into the baking pan.
- Layer the rest of the beef and potato mixture on top of the cheese.
- Top with the remaining cheese.
- Cover with foil and bake for 1 hour.

This is a great recipe! I have a shortcut though ! If you have leftover macaroni & cheese( I use boxed M&C),add some cooked,seasoned ground beef and tomato sauce.Mix together well.Serve with a vegetable and bread of your choice.Enjoy!

I have a recipe called hamburger helper
1 pound hamburger
1 cup hot water
2 cups milk
1 1/2 cup elbow macaroni
1 cup shredded cheddar cheese
sauce packet
1 tablespoon cornstarch
2 teaspoon paprika
1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon sugar
Brown meat, drain, add hot water, milk, pasta & sauce packet..boil, cover, reduce heat. Simmer for 12 minutes or till tender.
Last few minutes of cook time add cheese, stir and re-cover.
Let set for 5 minutes uncovered….then eat.Reply

I’m not sure what you mean as a sauce packet Wendy because neither recipe calls for a sauce packet unless you are talking about the tomato sauce and that comes in a can and usually is where you find the jars of spaghetti sauce.

Karen’s recipe for hamburger helper has sauce packet listed in both the ingredients and the directions. Maybe the elbow macaroni and sauce packet were from a box of mac & cheese? Both of these recipes sound good.

Mary, if you don’t want to use the processed American cheese food, you could use real cheddar cheese. That’s what I use when I make this .

It is a softer smoother Cheddar type cheese, like Velveeta in a block or you can buy slices and now you can buy shredded Velveeta cheese. Technically is it not a cheese but a cheese food. I have the recipe to make your own Velveeta if anyone is interested, let me know.

On the 6 cups of cooked macaroni. Is that 6 cups before you cook it or after? BC 6 cups of uncooked macaroni then cooked would be a lot of mac.

A classic potato hamburger casserole is “shipwreck”. It uses RAW hamburger – cooking the raw hamburger with the potatoes & rice gives them a really beefy flavor.
1 large onion, sliced
2 large potatoes, peeled and sliced
1 lb ground beef, uncooked
1/2 cup rice, uncooked
1 cup celery, chopped
1 cup carrots, sliced
1 can tomato or cream soup
1 soup can water
green onions, sliced, for garnish, optional
salt and pepper, to taste
Instructions
Preheat oven to 350F.
In a large casserole dish, layer onions, potatoes and ground beef. Sprinkle rice over ground beef. Top with celery and carrots. Season with salt and pepper.
In a small bowl, stir together soup and water. Pour evenly into casserole dish. Cover with aluminum foil.
Bake for 1 hour and half. Let cool about 10 minutes before serving.Reply

thank for these Tawra. They are helpful since I’m cooking from my freezer… thanks also for yesterdays video on using what you have. I’m focusing on making quick breads for breakfast from the large of cake mixes I have, rather than use my own flour, sugar, etc. People are still overbuying here and not leaving any food for anyone else. For most casseroles where the ingredients(like the pasta, meat etc.) I usually cook them about 30 mins. or until all the cheeses are nice and melted. They aren’t something you need to worry about too much. I will sometimes even turn my temperature down to 250 and let them cook for an hour to allow all of the spices and flavors to blend even more.

I made the quick and easy hamburger casserole today, it’s really good. I had some French fried onions I needed to get rid of, so I added them on top. It would have been great with or without them though. I look forward to trying more of ya’lls recipes.

I have to cut the Potato hamburger casserole in half. I only cook for 4 (there is 2 of us and we like leftovers) and use a 8 x 8 pan
Would I need to cut the time also?
Also, I would love to add the Dried French onions on top for the additional 5 mins.Reply

You can shorten a little but what I would do the first time you bake it is 45 mins. test the potatoes with a fork and if they are getting tender then take the foil off and finish baking until totally tender. Be sure to write down how long it took then you will know the next time you bake it how long to cook.
