5 Must-Have Heart-Healthy Recipes Certified by the American Heart Association

At Beyond Meat, we’re always working to advance the taste and nutrition profile of our products. With the announcement of our new Beyond IV platform, the fourth generation of our Beyond Burger and Beyond Beef, we’re proud to unveil significant advancements across taste, health and clean label that have netted some of our tastiest and most nutritious products yet.

Some of the key changes in the new recipe:

  • Made with avocado oil — which is high in heart-healthy¹ monounsaturated fats
  • Reduced the saturated fat by 60% vs. the previous Beyond Burger & Beyond Beef to just 2g per serving (75% less than 80/20 beef)
  • Reduced the sodium by 20% vs. the previous version
  • Added nutrient-dense plant-based ingredients including red lentil and faba bean protein which increased the protein to 21g per serving

To celebrate the new products, which will be available at grocery stores this Spring, we’ve created a collection of delicious and heart-healthy recipes featuring our new Beyond Burger and Beyond Beef that are Heart-Check Certified by the American Heart Association.

Beyond Burger with Caramelized Onions and Avocado

INGREDIENTS:
1 large onion, thinly sliced
1 8oz package Beyond Burger® (2 patties)
4 thin tomato slices
¼ to ½ avocado, sliced
2 to 4 sliced grilled eggplant, optional
2 tbsp barbeque sauce
2 whole-grain hamburger buns, split and lightly toasted

PREPARATION:
1. Liberally mist a skillet with nonstick oil spray and warm over medium-high heat. Add sliced onion to the hot skillet and sauté for 17 to 20 minutes, until onion is golden brown and caramelized, stirring occasionally. If onion slices become dry at any point, mist with extra oil spray or add droplets of water to keep moist. Season with a pinch of kosher salt and ground black pepper to taste and transfer to the plate.

2. Reapply oil spray to hot skillet. Add Beyond Burger patties and cook according to package directions.

3. Transfer patties to buns and layer with tomatoes, optional grilled or roasted eggplant, sliced avocado, generous amount of caramelized onions and barbeque sauce.

Spicy Avocado Beyond Burger

INGREDIENTS:
1 Beyond Burger® patty
1 whole-grain hamburger bun
2 thin slices heirloom tomato
3 thin sliced red onion rings
6 sprigs wild arugula
1 tbsp jalapeño avocado mayo

Avocado Mayo
3 tbsp plant-based mayo
3 tbsp jalapeño
1 avocado, medium
½ cup fresh cilantro

PREPARATION:
1. Prepare avocado mayo. Roast jalapeño over open flame to char. Wrap to steam and peel off charred skin. Remove stem and (leave seeds for heat) finely chop 3 tbsp. Peel medium avocado and remove pit. Pick 1/2 cup leaves off fresh bunch cilantro (no need to pack down). Combine all ingredients in a small food chopper or with an immersion blender and chill.

2. Prepare the burger. Sear thawed Beyond Burger patty in a medium heat nonstick pan liberally misted with oil - 4 minutes per side or until internal temperature reaches 165 F. Lightly toast burger bun and build. Spread 1 tbsp of Spicy Avocado Mayo on top bun. Place arugula on the base of the toasted bottom bun, add cooked patty, sliced tomato, sliced red onion, and sauced top bun. Enjoy!

Beyond Beef Tostada

INGREDIENTS:
1 tsp taco spice
3 oz Beyond Beef®
⅛ cup apple, sliced into matchsticks
⅛ cup cabbage, chiffonade
½ tbsp jalapeño, sliced
1 tbsp cilantro leaves
1 tbsp slaw dressing
1 corn tortilla
½ tsp olive oil
2 tbsp canned black beans, low sodium
2 tbsp sweet potato puree
¼ small avocado, sliced

Slaw Dressing
2 tbsp fresh lime juice
1 tsp agave
1 tbsp red wine vinegar
¼ tsp salt

Sweet Potato Puree
1 cup sweet potato puree
1 tsp agave
1 tbsp Chipotle, canned (1 whole chopped)

Taco Spice
1½ tbsp onion powder
1 tbsp garlic powder
1 tbsp cumin powder
2 tsp coriander
1 tbsp chili powder
1 tbsp paprika
1 tbsp dried oregano

PREPARATION:
1. Make sweet potato puree. Microwave or bake sweet potato until fork tender. Peel skin and process potato in a food processor with agave and chipotle. Set aside.

2. Make taco spice. Combine all ingredients in a mixing bowl. Store in an airtight container and set aside.

3. Make slaw dressing. Stir all ingredients together in a mixing bowl and set aside.

4. Preheat the oven to 350 F. Season Beyond Beef with taco spice and set aside. Separately, mix apple, cabbage, jalapeño and cilantro with slaw dressing and set aside. Lightly spray the corn tortilla with olive oil spray and bake in the oven for 8-9 minutes or until crispy. Remove the tortilla from the oven and set aside. Heat a non-stick saute pan with olive oil and saute Beyond Beef over medium heat, breaking apart as desired 3-4 minutes until caramelized. Add black beans towards the end of cooking and stir until warm. Build your tostada: Layer - tortilla, sweet potato puree, Beyond Beef & bean mixture, sliced avocado, and apple cabbage slaw. Enjoy.

Beyond Beef Rice Bowl

INGREDIENTS:
2 oz Beyond Beef®
½ cup Brown Rice, cooked
½ cup broccoli, medium dice
¼ cup carrots, medium dice
¼ cup peas, frozen
2 tbsp soy sesame ginger sauce
½ tsp sesame oil
¼ cup snow peas, medium dice
½ tsp garlic, minced
¼ tsp ginger, minced
1 tbsp water

Soy Sesame Ginger Sauce
2 tsp low sodium soy sauce
2 tsp sesame oil
¼ tsp chili flakes
1 tsp agave syrup
1 tsp rice wine vinegar, unsweetened
2 tsp plant-based oyster sauce
4 tsp water

PREPARATION:
1. Cook brown rice according to package instructions.

2. Make the soy sesame ginger sauce by adding all ingredients into a small bowl and mixing. Set aside.

3. Cut broccoli, carrots, snow peas into medium dice.

4. In a non-stick pan with no oil over medium-high heat add Beyond Beef over medium heat, breaking apart with a spatula as desired 3-4 minutes until caramelized. Remove beef from the pan and set aside.

5. In the same pan add sesame oil. Over medium-high heat add the vegetables and saute for 1 to 2 minutes. Add in the water and keep on cooking until it has evaporated, less than 1 minute. Add cooked brown rice and the seared Beyond Beef back into the pan and cook over medium for 1 minute. Add the soy sesame ginger sauce to the pan. Heat together over medium, stirring to combine for 1 min. Enjoy.

Beyond Beef Italian Zoodles

INGREDIENTS:
2½ oz Beyond Beef®
½ cup zucchini noodles
2 tbsp water
½ cup broccoli florets
¼ cup carrot noodles
1 tbsp yellow onion, minced
½ tbsp fresh garlic, minced
1 tsp lemon juice (optional)
½ tsp avocado oil
1 tbsp fresh basil, rough chopped
¼ cup roasted tomato garlic sauce

Roasted Tomato Garlic Sauce
1 tbsp avocado oil
6 garlic cloves
4 sprigs of fresh thyme
2 cups cherry tomatoes, cut in half
½ tsp kosher salt
¼ cup white wine
¼ cup water
Black pepper to taste (optional)

PREPARATION:
1. Make the roasted garlic tomato sauce. Combine the tomatoes, avocado oil, garlic, thyme, salt & pepper in an oven-proof saute pan and slow roast uncovered at 350 F for 20 minutes or until garlic is tender. Remove pan from oven, pull out thyme sprigs and deglaze the pan over medium-high heat with wine and water for 1 minute or until liquid is reduced by half. Remove mixture from pan and set aside.

2. Prepare carrot & zucchini noodles with a zoodle maker (or use store-bought zoodles).

3. Lightly spray a non-stick saute pan with olive oil and brown Beyond Beef over medium heat breaking up as needed - 2-3 minutes. Remove beef from pan. In the same pan add olive oil and saute onion and garlic with broccoli 2 minutes over medium heat. Add in zucchini & carrot noodles and water, increase heat to medium-high (cover if you can) to cook off water to tenderize veg 1 minute. Turn heat down to medium-low and add back in cooked Beyond Beef with roasted garlic tomato sauce and toss to combine over medium 1 minute. Season with lemon juice and fresh basil off the heat. Enjoy.
