One thing I can’t live without is pizza. What actually encouraged me to try a low carb lifestyle was when I made a keto pizza for the very first time. I thought alright, if I can have pizza, I’ve got this is the bag. Nick and I couldn’t believe how delicious it was!
It’s been years since that first time. It took me a few months of pizza making to perfect this Fathead Pizza Crust recipe, and it is still the version I always make. I hope you love it as much as we do!
Ingredients
Mozzarella – I prefer to shred my own mozzarella because some of the pre shredded mozzarella you can buy contains corn starch. Aka carbs.
Parmesan – You can use either freshly grated parmesan or the shelf stable type. In this recipe it is used for flavour rather than texture, so it doesn’t matter what you use to make your low carb pizza.
Spicy Spaghetti Seasoning – This seasoning is one of my most favourite blends of all time! It’s really easy to mix up, doesn’t require any weird herbs and it surprisingly tasty in baked goods like this Fathead Pizza Crust, Low Carb Biscuits and Keto Flatbread.
How to make a Fathead Pizza Crust
Heat the oven to 400°. In a heat safe mixing bowl combine the grated mozzarella with the almond flour, parmesan, sea salt and spicy spaghetti seasoning, then mix the ingredients together. Cut the cream cheese into smaller cubes and place on top of the other ingredients.
Microwave on high for 1 minute. Stir with a wooden spoon and then microwave for an additional 30 seconds. Mix the dough well with the wooden spoon, checking to make sure the cream cheese and mozzarella has fully melted. Mix in the egg and knead until it is fully incorporated.
Place the dough onto a piece of parchment paper. Place a second piece of parchment or wax paper over top and roll out the dough to form a circle (or whatever shape you desire). Prick the dough with a fork all over to ensure even baking.
Slide the parchment right onto a baking sheet or pizza pan and bake in the preheated oven for 10 minutes, or until the edge of the keto pizza crust has turned golden brown.
Remove the fathead pizza crust from the oven and flip it over so that the bottom is now the top.
Decorate with Sugar Free Pizza Sauce, cheese and your toppings of choice.
Place the pizza back in the oven until the cheese is melted, about 7 minutes.
Slice into 8 and serve hot!
Expert Tips
- If the cheese hasn’t fully melted, continue to microwave in 15 second intervals until it has, before kneading in the egg.
- Do you find your parchment paper slides around too much? Try using a non stick baking mat! It will stick to your work station and then you can just slide the whole mat onto a baking sheet to bake your keto pizza crust.
- Need a quick, cost effective pizza sauce recipe? All you’ll need to make this Sugar Free Pizza Sauce is tomato paste, some dried herbs and water!
- How about a pepperoni stuffed crust pizza?! Slice a pepperoni stick lengthwise into quarters; you only need one for the whole pizza. Roll out your dough a little further than you normally would, place the pepperoni along the edge of the crust and then fold the dough over it. Bake as per recipe instructions and enjoy stuffed crust goodness!

Can you freeze Fathead pizza dough?
Rather than freezing the dough, I would tend to freeze the baked pizza crust (or bagels if that’s what you are making with fathead dough). You can even double or triple this recipe, make a whole bunch of Keto pizza crusts, and then freeze them individually.
To do so, you will first want to bake the crust before freezing. Then, when you are ready to enjoy your pizza, all you need to do is pull a crust from the freezer, sauce it, top it and then bake.
Can you reheat Fathead pizza?
You sure can! Microwave or reheat in the oven until hot. If reheating in the oven, I recommend covering with tin foil first so that the edges do not burn.
How many calories are in a fathead pizza crust?
For the entire fathead pizza crust, there is 1200 calories. Divided by 8, you’ll get 150 calories per slice.
